🌟 Start your day with a gut-friendly kick! 🌟
These Kimchi Fried Eggs on Rye Toast are the perfect way to fuel your morning while keeping those friendly gut bacteria happy. 🥚✨

Ingredients:
½ tbsp rapeseed oil
2 eggs
175g kimchi
½ tbsp chili oil
2 tbsp Thai basil, shredded
5cm piece of ginger, peeled & thinly sliced
2 slices of rye bread
2 tbsp live natural yoghurt
Sesame seeds, to serve

Method:
1️⃣ Heat rapeseed oil in a non-stick pan over medium-high heat. Fry the eggs for 1 min, cover with a lid, and cook to your liking (we love a runny yolk – 2 mins!). Add kimchi around the eggs just before they’re done and warm through for 1 min (don’t overcook to preserve those gut-friendly bacteria!).
2️⃣ In another pan, heat chili oil over medium heat. Add Thai basil and ginger, then sizzle for 1-2 mins until fragrant.
3️⃣ Toast rye bread, then top with the kimchi fried eggs. Add a dollop of yoghurt, drizzle with chili oil, and sprinkle with sesame seeds.
✨ Enjoy this flavourful, probiotic-packed breakfast! ✨
