Mental health and nutrition are much more connected than people often realise.

When someone is struggling with stress, anxiety, low mood, or burnout, it can directly affect how they eat—not just what they eat, but when, how much, and even whether they feel able to eat at all. Some people lose appetite entirely, while others may find themselves turning to food for comfort or convenience when emotional capacity is low.

This isn’t about willpower. It’s about how the brain and body respond to emotional load. High stress levels can influence hormones that regulate hunger and fullness, disrupt sleep (which in turn affects appetite), and reduce the motivation or energy needed to plan balanced meals.

Over time, this can create a cycle where poor mental health leads to inconsistent nutrition, and inconsistent nutrition can then feed back into lower energy, mood dips, and reduced resilience.

That’s why conversations about food and health need to include mental wellbeing. Supporting nutrition isn’t only about meal plans or calories—it’s also about capacity, stress levels, and emotional health.

Sometimes the most effective “nutrition strategy” starts with looking after mental health first, so that consistent, nourishing habits become easier to build and maintain.

A Healthy vegetarian dish bursting with flavour 👌

Burrata & Roasted Eggplant Stack
Ingredients:

For the Roasted Eggplant:

1 large eggplant, sliced into 1/2-inch rounds

3 tbsp olive oil

1 tsp garlic powder

1/2 tsp paprika

Salt and black pepper to taste

For the Stack:

2 balls burrata cheese

1 cup cherry tomatoes, halved

1/4 cup roasted red peppers, sliced

2 tbsp fresh basil leaves

1 tbsp fresh parsley, chopped

1 tbsp balsamic glaze

1 tbsp olive oil

Salt and black pepper to taste

For Serving:

Toasted bread or crostini

Directions:

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.

Arrange eggplant slices on the sheet, brush with olive oil, and season with garlic powder, paprika, salt, and pepper.

Roast for 20–25 minutes, flipping halfway through, until tender and golden. Let cool slightly.

On a serving plate, layer roasted eggplant slices with torn burrata, cherry tomatoes, and roasted red peppers, stacking gently for height.

Drizzle with olive oil and balsamic glaze. Season lightly with salt and pepper.

Garnish with fresh basil and parsley.

Serve immediately with toasted bread or crostini.

Finally completed this diploma 🥳
Menopause is a natural stage of life—but the way women experience it is deeply shaped by the support (or lack of it) around them.

Too often, menopause is dismissed, misunderstood, or treated as something women should simply “push through.” In reality, it can bring significant physical, emotional, and mental changes—from fatigue and brain fog to mood shifts, sleep disruption, and changes in metabolism. This is exactly why support matters.

One of the most impactful (and often overlooked) ways to support women during menopause is through nutrition.

Food becomes more than just fuel—it becomes a tool for balance and resilience.

Prioritising protein helps maintain muscle mass and stabilise blood sugar. Healthy fats support hormone production and brain health. Fibre-rich foods improve gut health and help manage weight and cholesterol. Key nutrients like calcium, vitamin D, and magnesium are essential for bone strength and overall wellbeing.

Even small, consistent choices—like eating balanced meals, staying hydrated, and reducing ultra-processed foods—can make a noticeable difference in energy, mood, and long-term health.

But beyond the science, nutrition is also about empowerment. It gives women a way to actively support their bodies during a time that can otherwise feel unpredictable.

Menopause shouldn’t be something women navigate alone or in silence. With the right support, understanding, and nourishment, it can be a stage of strength, clarity, and renewed focus on health.

Dates are high in fibre → good for digestion
Natural sugars → quick energy boost
Contain minerals like potassium and magnesium.

Don’t have too many though due to sugar content but lovely as a healthier sweet treat!

If you’re in your later years and want to focus on supporting your blood pressure, weight, and overall health I may be able to help.

I’m currently working with a lady in her mid 70s who has a goal of losing around half a stone, with a focus on low to moderate exercise and sustainable dietary changes.

It’s been really interesting supporting her and looking at nutrition and movement in later years — what works, what needs adapting, and how small, consistent changes can still make a big difference.

I’m pleased to say she’s made great progress towards her goal so far including lowering blood pressure.
