W e l l b e i n g 🤍

Thank you World Mental Health Day, for reminding us of what we can achieve together.

I think most of us have experienced some emotional challenges in our lifetime, or know somebody close to us that has.

One of my most challenging times was during my early twenties, after my dad passed away. I experienced debilitating anxiety and panic attacks, at my worst I couldn’t go to the supermarket, drive on the motorway or sometimes hold a conversation down without it triggering panic of some kind. I was terrified i would feel like this forever.

Reaching out for support and working with different teachers and therapists, taught me how to process my grief, manage stress and take care of my mental health through things like movement, diet, rest, and a range of holistic therapies.

Fast forward 20 years, those experiences are a big part of who I am and why I do what I do today.

W i n t e r t o n i c s 🌱

Elderberries are brimming with phytonutrients that have been used for hundreds of years to treat many conditions. Often referred to as the ‘house pharmacy’ due to its many properties.

You may know elderberry for its ability to prevent illness or to stop the progression and severity of the cold and flu virus. Traditionally it has been made into teas, tinctures and syrups.

You can take it as a daily preventative, or at the onset of a tingling throat or running nose until illness subsides!

I love using ice trays, you have a ready to go tonic through the colder seasons which feels like a warm hug!

S o u p S e a s o n 🍅🥦

Did you know that cold, raw foods are harder for the digestive system to break down, particularly for people with weaker digestion.

Cold foods also cool the body internally, this can leave you feeling bloated, chilly and drained rather than warmed and nourished.

As we head deeper into the colder months, try more warm, cooked foods that stoke the digestive fire and create warmth from within.

Cavolo Nero soup is a traditional Tuscan recipe and one of my favourites! Make it your own, add any ingredients you like or need to use up!

Seasonal Cavolo Nero Soup
Ingredients
Olive oil
1 red onion, finely diced
3-5 garlic cloves, chopped or minced
1-2 leeks, sliced
3-4 carrots, chopped (optional)
Good bunch of cavolo or any leafy greens
Roughly 300g fresh tomatoes or 1 tin
1-2 tins of beans, such as butter beans or chickpeas
Roughly 1 litre of veg stock
Sourdough or fresh bread to serve (optional)

Method
Saute the onions and leeks in a little olive oil for 5 minutes or so. Add the garlic and until fragrant. Add the carrots, cavolo, beans, tomatoes and stock, season well, cover and simmer gently for 30 minutes or so until the veggies are tender. Throw in any veggies or leafy greens you have laying around.

Serve with fresh bread, enjoy! 🍅🥦🫛

S e a s o n a l p l u m c a k e 🍐

This cake is so easy to make and super yummy! Try not to eat it all at once, like we did!

I don’t often measure ingredients and tend to throw everything together and hope for the best, the measurements below are a rough guide!
I used plums, but you could use damsons or apricots 🍑

Ingredients
5 plums, damsons or apricots, sliced in half
200g flour, I used whole meal self raising
140g butter or coconut oil
I used 1/4 cup of brown sugar and a good squeeze of honey
2 large eggs
1/2 - 1 cup of natural yoghurt (optional)
Pinch of cinnamon
1tsp vanilla extract
Splash of milk or coconut milk

Preheat oven to 160 fan, grease a baking dish. Slice the fruits in half and remove the stone, leave to one side. Mix all the ingredients together in a large bowl until well combined. Spoon the mixture into the dish and place the fruits skin side down on top, don’t worry about pushing in too far as they will sink as the cake bakes. Place in the centre of the oven for roughly 25 minutes.
(I baked mine for 20 minutes and it was perfectly browned on top but still a little wet in the middle. I turned the oven off as had to do the school run but left the cake in the oven-it was perfect when we returned!)
