t a s t y m i d w e e k s u p p e r s 🤸

This mid week supper ticks all the boxes. It’s nutrient dense, quick and easy and the kids loved it.
If I’m super busy I’ll make double, so we can eat it twice during the week!

I used,
I red onion, finely diced
4-5 garlic cloves, sliced
1 courgette, cubed
1 small jar harissa paste
2 tins of chickpeas (you could use any beans that you like)
1 cup of water
Coconut yoghurt
Lemon juice
Spring onions to garnish
Sourdough toasted

Method
Sauté the onions in a little olive oil or water for 5 minutes or so. Add the garlic and harissa paste until fragrant. Add the courgettes, chickpeas and water, season well, cover and simmer for 10 or so until the courgettes are tender.
Serve with coconut yoghurt, a squeeze of lemon and a side of toasted bread, pitta or rice.

Eating protein and healthy fats with your first meal of the day can determine how you feel and perform for the rest of the day.

Every food that we eat sends a different message to our body. When we eat the right foods it provides the raw ingredients needed to make our hormones, enzymes and neurotransmitters so we can regulate naturally.

Maybe you feel hungry constantly, your mood or blood sugars swing or you’re looking to improve your weight, digestion, energy or focus, try adding some quality protein (roughly a palm size) some healthy fats and fibre to your meal times, particularly your first meal of the day 🤸

Good options include,
Eggs
Quality meats, fish
Tofu
Tempeh
Feta
Greek yoghurt or plain cultured
Avocado
Nuts, seeds
Nut butters
Protein shakes
Green leafy
Berries
Left over dinner for breakfast 😁
