For the past 17 years, I've served as a Registered Paramedic in the ambulance service, a profession I've found deeply fulfilling. However, it has also demanded long hours, nights shifts and weekends, often taking me away from cherished family time and neglecting my own self-care. As I reached mid-life and confronted the challenges of perimenopause, I grappled with fatigue, difficulty concentrating, fluctuating weight, and a diminished sense of purpose. Seeking a new direction, I embarked on a journey to become a certified Health and Wellbeing Coach, driven not only by my own needs but also by a desire to help others reclaim their health and happiness. In my years as a paramedic, I witnessed countless cases of chronic illness and lifestyle-related diseases that could have been prevented with healthier lifestyle choices. Motivated by these experiences, I'm committed to making a positive impact by guiding people toward healthier lifestyles. My aim is to assist individuals in adopting habits that lead to happier, healthier lives, ultimately promoting longevity and well-being.

Today’s bowl: spiced squash + red lentil soup topped with nutritional yeast flakes, cottage cheese, feta, chilli flakes, and a sprinkle of mixed seeds for extra crunch. 🌶️✨

Here’s how to keep it stable throughout the day:

🥗 Prioritise Protein with Every Meal:
Protein helps slow down the absorption of sugars, preventing sharp spikes. Include lean meats, fish, eggs, or plant-based options like beans and quinoa. 🍳🌱

🥑 Healthy Fats are Your Friends:
Avocados, nuts, seeds, and olive oil keep you feeling fuller for longer and stabilise blood sugar levels. 🥑🌰

🌾 Choose Fibre-Rich Foods:
Fibre slows digestion, preventing rapid sugar absorption. Opt for whole grains, legumes, and plenty of leafy greens. 🥬🍠

🍋 Stay Hydrated:
Dehydration can cause blood sugar levels to rise. Drink plenty of water throughout the day to keep things balanced! 💧

New favourite brunch this week!

Harissa baked eggs with veg, avocado and feta

Full of nutrients to keep you full, nourished and happy 😊

2 eggs
1 tsp olive oil
100g tinned tomatoes
1/4 red onion sliced
1/2 a courgette sliced
1/2 red pepper sliced
Large handful spinach
1 tsp harissa spice or paste

Fry the veg in olive oil, add harissa and tomatoes, add spinach. Make two wells, crack eggs into the pan and cover with lid until eggs cooked.

Top with 1/4 avocado and sprinkle of feta and enjoy! 😋
