A little experiment a couple of weeks ago and the first outing this year for our Monolith Kamado.

Kamado Moussaka ~ Logistics played a huge part in this dish and it was a six hour cook. Starting off with direct grilling of the potatoes, aubergines and onions straight in the coals for amazing dirty onions. Next the base tomato, red wine and cinnamon sauce including the dirty onions over direct heat and then with indirect lower temperature I placed spiced & herbed lamb mince ‘over the top’ of the sauce on a wire rack and smoked. Once the meat had reached temp I added to the base sauce and continued to cook for another couple of hours developing those flavours resulting in a rich lamb sauce infused with smoke tones. Then the béchamel, rich with cheese, nutmeg and egg yolk.

Layered in a cast iron skillet and back into the Kamado for another 45 minutes of indirect heat to finish the dish and create that beautiful golden top.

Final step was leaving it to rest before plating and served with a fresh Greek salad. Roll on sunny days 🙏🏻

Goan 24 Hour Sous Vide Pork Belly Vindaloo - at this point forget those restaurant versions, the ones equivalent to the centre of a volcano and think of beautiful Portuguese origins mixed with Indian spices.

It has a subtlety, yes there’s heat but it’s balanced with those beautiful pork flavours front and centre.

Served with a coconut, lime & coriander rice.

First post in a while, I’ve been taking a break from Insta but this is worthy of a post.

Fancied old school, a winter warmer on this cold evening. The fire is roaring, the wine flowing and the food, just want we wanted.

Beef Shin & Wild Mousseron Mushroom Suet Puddings… mine had lambs kidney, courtesy of our local butcher, as well as I love them and he’s a hater!

Served with more sautéed Wild Mousseron Mushrooms, a side of creamy mash and buttered Savoy cabbage.

Old school and it was an absolute belter 🙂

A night of Asian inspired flavours…

Pork Collar Char Sui and Mushrooms

My take on Char Sui, marinated for 24 hours, sous vide for 24 hours and then finished off with a high heat to get that beautiful outside caramelisation, whilst still beautifully pink and succulent inside.

With some mushroom madness including charred Pink, Yellow & Grey Oysters & Shiitake mushrooms with spring onions in oyster sauce & black sesame, soy glazed King Oyster mushroom and pickled white and brown Shimeji mushrooms.

Accompanied with a side of stir fried noodles with bean sprouts.

Absolutely banging out the flavours, it was glorious and that’s the Asian inspiration done for a while!
