Something interesting started on my main business page the other day- a friend who is clearly in the anti- grains camp. They made some interesting comments but I thought I
would share a few things off the back of this

Sweet potato and black bean stew. It's not got loads of ingredients so could be a recipe for clearing odds out of the cupboards
Tomatoes
Sweet potato
Black beans
Spinach
Turmeric
Paprika
Stock
Salt and pepper
Onions and garlic

I do like a decent stew type meal you can basically let it cook itself 😊

I roasted up : red pepper, carrots,sweet potato, red onion, garlic and chillis in olive oil
Whilst they were cooking I chopped chicken and covered it in jerk seasoning mix ( had a jar in the cupboard- nice to use some up)
Cooked it in olive oil.
Emptied a container of passata in the pan and added: paprika, chilli flakes, onion salt and smoked garlic powder, with some Italian seasoning.
Bit of a dump meal and a strange sounding flavour combination bur it works really well! Nice rich sauce 😊
I've got 3 lots of the chicken, and 2 smoked mackerel fillets for other days, which has a sweet chilli sauce on.

So this definitely won't win any beauty prizes and there's really no way of dishing it up that will make it look any bet...

So this definitely won't win any beauty prizes and there's really no way of dishing it up that will make it look any better but I absolutely LOVE a shakshuka 😍😍
Such a great way of using up leftovers that would otherwise be wasted and so many recipes that you can use for a basis for building your own.
This is my go-to. Spinach, chorizo, eggs and tomato with a bit of seasoning. Quick and filling. 👍

Yesterday I read the book on the left ( I read really fast). It was very interesting, I'm a big nutrition nerd so absolutely love reading about nutrition science and food in general. It used to wind my ex- partner up when he'd arrive home and I'm watching a cooking programme 😂🤦‍♀️
Enough about that.
This book outlines the Mediterranean diet, the science behind it and has a few recipes in but a lot of it, I thought I knew, it turns our wasn't as expected.
Because of my intolerances I'm mostly gluten free and dairy free. This Mediterranean diet is plant based with fish, a bit of chicken and very occasionally, red meat.
I'll give it a go! Nuts and olive oil in quite large quantities.
The bowl on the right was lunch- rocket, fennell, orange, pomegranate seeds and dressed with a lemon and oil dressing, topped with walnuts. Surprisingly filling!

Free from pasta with spinach, and mushrooms in a tahini based sauce. It's so lovely but next time I'll use a free from cream substitute because the slight nuttiness is a bit strange to me.

Whilst I'm on a bit of a juice thing for breakfast at the moment because the weather is warmer, I've gone a bit crazy over watermelon.

I roasted the rest of the cashews- for snacking purposes ( I definitely don't need to eat them all at once because the calorie count on this lot is huge)
This is 2 cups of cashews, covered in:
1tbs olive oil
2tbs maple syrup
1/2 tsp salt
1/2 tsp cayenne
Roasted at 190°c for 5 minutes- stirred and put back in for another 5 minutes
Take out and add another 1/2tsp salt
Let them cool.
Yes a corner's worth has gone because I'm ready for dinner and it won't be ready for ages ( waiting for other people to come home) 😭😂
Will 100% make these again! So good!

What a fantastic salad! Not a leaf in sight 😂 ( I do like a leafy green salad don't get me wrong but THIS is filling 😵‍💫)
Cous cous, roast potatoes, roasted veg and chickpeas and tomatoes done in a pan. All spiced/ seasoned lightly and served with a vegan mayo, maple syrup and mustard dressing. A LOT of prep for the veg but once it was chopped, a really quick and low fuss recipe. Will 💯% make again.
I used cous cous instead of quinoa ( gluten free cous cous) and added baby corn instead of olives because sadly I cannot stand olives no matter how much I want to like them 😭

Apologies once again for the lack of posts- I've been quite ill.
Whilst I'm improving I still have down days where I'm struggling to breathe and be a functional human.
On the plus side, I've been cooking and can share these with you- pictures only obviously 😂
I'll share links to the recipes when I can too as I didn't create the ideas but the results were amazing. I'll add the links and general information about them in the individual picture information
