*Fry onions & courgette with crushed garlic & ginger in a big wok pan.. mix in spice mix to taste eg turmeric/ginger/masala spices..let brown & then add
*chopped diced sweet potato (or, pumpkin)..chopped tomatoes..coconut milk…1/2 litre veg stock…..250g red lentils….let it allll simmer for 30mins mid-heat & longer on slow heat / in the slow cooker … perfect weather for it !!🍁

Adapted from a recipe by Rose Elliot I used to make it a lot around 18 years ago!!
* 250g grated carrots
* 125g raisins
* 6 Tblsp Rapeseed/coconut oil
* 100g coconut sugar
* 250g gluten free self raising flour (I used Doves)
* 1 tsp grated nutmeg
* 1 tsp ground ginger
* 1 tsp ground cinnamon
* 6 Tblsp lemon juice
* 6 Tblsp agave / date syrup
Frosting:
* 150g dairy free cream cheese (I used the vegan Philadelphia oat/almond one)
* 2 Tblsp lemon juice
* 20g coconut sugar

~ Line/grease a tin
~ put carrots, raisins, oil & sugar in a bowl & mix
~ add flour, spices, lemon juice & stir to sticky mixture.
~ spoon into tin & bake for 45mins 160oC or until a skewer inserted into the centre of cake comes out clean. Leave in tin until cooled.

~ frosting : mix the vegan cream cheese with the lemon juice & coconut sugar, keep in fridge till cake has cooled & then spread on top.
