Whether you celebrate today or not, have a lovely day! This year has been hard, it’s okay if you don’t feel festive. My festive mood is missing this year, this Christmas is the most difficult Christmas I’ve had but I’ll get through it. I’m not alone, I have my boyfriend who’s doing his best to support me whatever I’m going through, and so are my parents, unfortunately they’re thousands miles away and I haven’t seen them for 18 months 😒 BUT, I don’t want this post to sound negative! Let’s all leave anything that makes us sad behind for the next few days and despite how crazy it all feels this year, let’s create some good memories 😌 This year I didn’t have time to think about Christmas presents and didn’t even want to take part in mad shopping, I live in town centre and seeing the High Street so packed with people almost every day put me off enough. So I decided to prepare homemade presents 🎁 I’m not good at DIY but I’m good at baking πŸ˜…πŸ‘©πŸ»β€πŸ³ So I used my skills and made those cuuuute REINDEER BROWNIES 🦌🍫 I’m very pleased with how they came out, there adorable, aren’t they? πŸ₯° I also made cranberry & orange fudge with chocolate drizzle... I’ll post it another day but let me tell you now - it’s fudging good 😁 Homemade presents always bring more joy in my opinion...and especially if you can eat them! πŸ˜‰

Cinnamon and raisin bliss balls πŸ₯°πŸ§‘
My oven was broken for a few and I wasn’t able to bake anything ☹️ I fancied a homemade sweet treat... ☹️ Then I remembered that it’s been soooo long since I made bliss balls! And I love bliss balls πŸ₯° Can make so many varieties of them, I never get bored! And it’s also a healthy treat which satisfies my sweet tooth very well πŸ‘Œ This time I prepared an autumnal/wintery version of bliss ball, using a mix of dried fruit I found in my kitchen cupboards, oats, Nutcessity gingerbread almond butter and cinnamon (there’s already cinnamon and ginger in the almond butter but I love cinnamon so I added some extra! You can have too much cinnamon...πŸ™ƒ) Detailed recipe below πŸ‘‡
🧑170g raisins (I actually used a mix of raisins, cranberries and dried figs cause that what I had in my cupboards πŸ˜„)
🧑130g oats
🧑65g Nutcessity gingerbread almond butter (or other nut butter ☺️)
🧑1/2 tsp cinnamon (or more/less to taste)
πŸ‘©πŸ»β€πŸ³ Soak the raisins for 30-60 minutes, then drain the water and place them in a food processor alongside the rest of ingredients. Blend for 20-30 seconds or until the mixture is semi-smooth and sticky (time depends on a food processor you use). Don’t blend for too long as it will become to sticky! Transfer the mixture into a bowl and shape balls. It might be easier with slightly wet hands. I got 12 bliss balls, approx. 30g each. Enjoy 🧑🧑🧑

Pumpkin & chocolate baked porridge πŸ«πŸŽƒ
I haven’t had baked porridge in ageeees! I usually just mix together oats and milk/water in a bowl, chuck some chopped fruit in there too and pop it in a microwave for a couple minutes... Quick, easy and I like it πŸ€·β€β™€οΈ But I have been craving a baked porridge for a long time to be honest! And so I made one πŸ™Œ Of course autumnal & Halloween-y πŸ‚πŸ‘» = with pumpkin purΓ©e πŸŽƒ and pumpkin spice πŸ‘ŒTo make it even fancier, I swirled some of Nutcessity chocolate hazelnut & brazil nut butter into it & sprinkled some choc chips on top as well πŸ‘ŒπŸ« It was soooo good! Recipe below...Why not try it tomorrow morning, it’d be a perfect breakfast for Halloween πŸ‘»
πŸŽƒ60g oats
πŸŽƒ100ml plant milk of your choice
πŸŽƒ100g pumpkin puree
πŸŽƒ1/2 teaspoon pumpkin spice or cinnamon, or all spice
πŸŽƒ(optional) sweetener of your choice (I added a few vanilla flavour drops by )
πŸŽƒheaped spoon Nutcessity chocolate hazelnut & brazil nut butter (or other nut butter of your choice πŸ‘)
πŸŽƒchocolate chips
πŸ‘©β€πŸ³ In a bowl, mix together all ingredients apart from nut butter and choc chips. It should be thick and a bit sticky. Transfer the mixture into a baking dish and swirl the nut butter on top of the porridge mixture, then sprinkle some chocolate chips on top as well and bake for about 30-35 minutes in 180Β°C. Let it cool for a few minutes and enjoy! 🧑🧑🧑

That was such a good breakfast 😍 Created by accident as well, if I’m honest πŸ€ͺ I don’t really know what to call it... it is basically warm chocolate tofu pudding? πŸ«πŸ€” I found a few packs of silken tofu which I bought a while ago and never used (I do that quite a lot don’t I? πŸ˜†) but finally got around to it! I blended it with some milk and cocoa powder but then decided I wanted a warm breakfast because it’s so chilly outside πŸ₯Ά So I put it in a pan and heated up, added some orange as well...chocolate orange yesss 🍊🍫 So so creamy and satisfying πŸ₯° Served with some almond coconut butter on top πŸ‘Œ

🀎 one pack silken tofu (300g)
🀎 100ml plant milk of your choice
🀎 heaped spoon cocoa powder
🀎 sweetener of your choice (I used chocolate flavour drops)
🀎 big orange (150g)
🀎 15g corn flour + 3-4 tablespoons of water
πŸ‘©β€πŸ³ In a blender, blend together the tofu (drain it beforehand!), milk, cocoa and sweetener until smooth. Peel and chop the orange. Mix the corn flour with water. Transfer the blended mixture into a pan, add the orange (save a few pieces for decoration) and constantly stirring, heat up until it starts to bubble. Still stirring, add the mixture of corn flour and water and cook until the pudding thickens. Transfer into a bowl and go crazy with your favourite toppings πŸ‘Œ Enjoy πŸ₯°

Eating fruit and vegetables which are in season has many advantages:
🧑 is better for the environment, because it is likely that if the produce is in season, it can be cultivated without additional heating or protection (like pesticides);
πŸ’› better taste, as it is the time of year that the food is at its optimum, and typically cheaper to buy;
🧑 can support the local economy.

Basing your meals on more seasonal and local food, particularly
fruit and vegetables, is one of the dietary changes proposed to achieve a more sustainable diet.

As autumn is soooo sooo close (I can feel it the air, literally!), I wanted to introduce some of the fruit & vegetables which are coming into the season...πŸŽπŸπŸ†πŸ₯•πŸ§„πŸ₯”πŸ πŸŒ°
AUTUMNAL FRUIT: apples, grapes, figs, pears, plums, blackberries...
AUTUMNAL VEGETABLES: aubergine, beetroot, broad beans, butternut squash, kale, leek, potatoes, beetroot...
All of them are rich in antioxidants, vitamins and fibre.
