Health Benefits of a Vegetarian Diet

1. May Improve Mood
Arachidonic acid is a substance that usually comes from dietary animal sources and, no surprise, vegetarian diets are not high in arachidonic acid. This can be beneficial, as research has shown a link between arachidonic acid and mood disturbances. Researchers at Benedictine University performed a study to investigate the impact of restricting animal products and mood and confirmed that mood improvements do happen when eating meat, fish, and poultry are restricted.

Additionally, Croatia’s Institute for Medical Research and Occupational Health conducted mental health surveys amongst vegetarians and found them to have lower levels of neuroticism.

2. May Improve Symptoms of Psoriasis
Psoriasis is a skin disease that causes skin redness and irritation and can be debilitating for those who suffer from it. However, according to research published by Brazil’s Universidade Federal de Pernambuco, a vegetarian diet may positively improve symptoms.

3. May Reduce Incidence of Diabetes
According to Loma Linda University School of Public Health, vegetarian diets are associated with a significant reduction in the incidence of diabetes. [4] Information published by George Washington University School of Medicine has also confirmed that vegetarian diets offer an important benefit for the management of diabetes and can even reduce the likelihood of development by one half.

4. Reduces Risk of Cataract Development
Oddly enough, research released by the Nuffield Department of Clinical Medicine at the University of Oxford has shown a strong relation between the risk of developing cataracts and diet; with a higher risk falling on meat eaters and the lowest risk groups being vegetarians and vegans. [6]

5. Reduces Risk of Cardiovascular Disease
According to the JCU University Skin Cancer Research Clinic, there is a relationship between a vegetarian diet and decreased risk of cardiovascular disease. Why? Most vegetarian diets are full of antioxidant rich foods. Antioxidants are molecules that can reduce the damage caused by oxidative stress, including atherosclerosis.

6. Vegetarians Usually Have Low Cholesterol
There’s no health benefit, at all, to eating animal fat. It should come as no surprise that when you remove it from your diet, you will also remove the detrimental effects it has on your health life. After examining the long term effects of following a vegetarian diet, Korean researchers very comfortably concluded that body fat, and cholesterol levels were lower in vegetarians than omnivores.

7. Less Risk of Stroke and Obesity
There are always exceptions but, in general, vegetarians and vegans tend to be much more deliberate in their food choices and far less likely to binge eat or choose foods based on emotions- two habits that greatly contribute to obesity. According to the University Hospital Ghent Department of Paediatrics in Belgium, following a vegetarian diet is a good way to reduce your chance at having a stroke or being obese.

8. Less Chance of Developing Kidney Stones
New York University Langone Medical Center reports that eliminating animal protein consumption in favor of vegetables will result in a higher urine pH; whereas low urine pH has been associated with stone formation.

9. It Can Satisfy All Your Nutritional Requirements
If you think vegetarians and vegans are nutritionally deficient or always hungry, think again! The official position of The American Dietetic Association is that a comprehensive and well designed vegetarian, or vegan, diet can be nutritionally sound and appropriate for all ages and stages of life, including infants, the elderly, and even athletes. Good health, reduced incidence of disease, and better management of existing health problems are all associated with following a vegetarian diet.

The world’s second-most consumed beverage after water, green tea has vast health-giving potential, thanks to a substance in it called epigallocatechin-3-gallate (EGCG). Studies show that EGCG lessens the risk of cardiovascular disease, stroke, high blood pressure, and certain cancers. It reduces the digestive tract’s absorption of cholesterol, lowering LDL (bad) cholesterol, and interferes with cancer cell growth rates, decreasing the risk of adult leukemia and the spread of breast cancer cells. EGCG also impedes bone-eroding molecules that cause the joint inflammation of rheumatoid arthritis.

Choose It & Use It
Aim to drink 5 cups of green tea, steeped for 5 minutes, daily. Longer, hotter steeps add bitterness, but up the antioxidants. Grind green tea into spice rubs, infuse it into drinks, or use it as a cooking liquid or marinade. If you’re not a fan of its grassy flavor, try a blend with a stronger flavor, such as pomegranate, or sneak the brew into smoothies, sauces, and grains.

We are pleased to introduce to you the GHANA COALITION OF SPIRITUAL SOCIETIES (GCOSS), and the forth coming 3-day meditation and prayer intercession 2012 Conference. The society is voluntary gathering of various spiritual societies in Ghana with the objective, among others of contributing through meditation and prayer for peaceful elections in Ghana and other national challenges.



The Coalition is made-up of various representatives of organisations committed to the highest ethical development of its members and in society as well as the aspiration and practise of meditation towards Self-realization and God-realization.



The theme for the 3-day Meditation and Prayer intercession Conference is ‘PEACE BEGINS WITH YOU’, the event will take place from 23rd, 24th 25th November 2012 at the Teacher’ s Hall Accra, Ghana. The gathering is intended to provide a platform for spiritual societies and all peace loving citizens to gather to meditate and pray for a peaceful election in December 2012, Ghana. The Keynote address will be delivered by H.H. Sant Rajinder Singh Ji Maharaj; (Spiritual Head of Science Of Spirituality -India) there will be other international and local speakers.



A scheduled non-denominational peace march dubbed ‘PEACE BEGIN WITH YOU 2012’ will take place on the second day of the Conference 24th November 2012, (Saturday) through the principal streets of Accra, Ghana. This programme has been necessitated by the need to make a concerted effort by all and sundry to invoke divine grace for peace, before, during and after elections. Africa, aside its major social and economic challenges have been gripped with acute need for peace amongst its communities which in recent times has become a major concern for all, particularly during election times.



Whilst we believe all efforts must be made to ensure peaceful elections, the peace which emanates from the individual’s contact with the divine within, through meditation is also of great importance for sustainable outer peace. This has been taught by all saints, prophets, and sages of all clime and cultures.

Ghanaian Peanut Balls

1 cup blanched shelled peanuts
2 1/2 cups all-purpose flour
1 pinch salt
1 cup vegan margarine
3/4 cup powdered icing sugar
2 teaspoons vanilla
2 tablespoons slivered almonds

Set oven to hot 400 degrees.

Work the peanuts thru the fine blade of a grinder.

Sift the salt with the flour.

Cream the margarine and beat in the confectioners sugar until soft and light fluffy, add in the vanilla.

Stir in the sifted flour and the peanuts.

Shape the dough into walnut sized balls, and set onto an ungreased parchment lined baking sheet and place a piece of slivered almond standing up on each ball.

Bake in the preheated oven ten to twelve minutes or until the balls are just beginning to turn golden brown.

Transfer to wire rack and cool completely.

Store in an air tight tin for up to one week.
