Our is the Savoy Cabbage from France

Savoy cabbage is a winter vegetable thought to have originated in Milan, Italy for some while others located its origins in Savoy, a region of France – thus its name.

Savoy cabbage is a large and dense, loose-headed green that is round to ovate in shape. Distinguished by its heavily textured, crinkled leaves, it has ruffled edges with deep ridges spanning across the surface of the leaves.

Savoy cabbage is generally eaten cooked in various ways: soups, stew, boiled in water, stir-fried or as a side vegetable. Its ‘’waffles’’ style leaves make it particularly suitable for making whole stuffed cabbage between leaves.

Here are the steps for carving your Halloween butternut squash 🎃:

1) Cut the top off the butternut
2) Scoop it out using a large spoon
3) Draw a simple outline of a face with a marker pen
4) Cut out the eyes, nose and mouth with a serrated knife
5) Pop a tea light inside the squash, light it and replace the crown

Our is the Rojo Brillante Kaki from Spain

The variety was first discovered growing in Valencia region more than 50 years ago and is thought to have developed naturally from the conventional kaki varieties that were introduced into eastern Spain.

Rojo Brillante Kaki is a non-astringent variety. It lacks a core, seeds, and tannins. This kaki has a rounded shape and is capped with an indented leaf. When ripe, Rojo Brillante possesses layers of flavour, reminiscent of pear, dates with nuances of cinnamon. Its texture varies from crisp and succulent when young, to a tender and gelatinous texture as they mature.

Rojo Brillante Kaki contains significant amounts of fibre and vitamin A. Additionally its contains vitamin C and trace amounts of vitamin E, K and B-6.

Rojo Brillante Kaki is highly versatile as it can be eaten fresh out of hand, added raw to cold dishes, or added to cooked applications like roasts, sauces, jams and jellies. It can be sliced and used as a topping for pies, tarts, yogurt, and toast. Cooked down and pureed.

Our is the Parsnip from France

Native to Eurasia, Parsnip has been used as a vegetable since Antiquity. Cultivated by Romans, Parsnip, closely related to carrots, was even confused with them in the literature of that time. Before the arrival in Europe of the sugar cane, it was used as a sweetener.

The parsnip is usually cooked, but it can also be eaten raw. They resemble carrots and can be used in similar ways, but they have a sweeter taste, especially when cooked. They will give a rich flavour to stews, soup and casseroles.

Parsnip provides high content of vitamin K, A and C, essentials elements for blood circulation and cells division period (like during infancy and pregnancy). These vitamins also enhance immune system and strengthen vision. Parsnip also contains good levels of magnesium and phosphorus, known to improve bone health and helps muscles contract, including the heart. Last but not least, it is rich in dietary fibers, easing transit and good against inflammation of the colon.

Our is the Orange Tangor from Reunion Island, France.

A bit of History: The Tangor variety was introduced from Corsica and wide spread in Reunion in the 70’s. Skin color at maturity is a deep reddish-orange. Even green, it can be filled with sweet and fragrant juice. Its bright orange pulp is sour-sweet and full-flavored.

The Orange Tangor contains vitamin C, a multi functional nutrient essential to healthy eyes, skin, teeth and bones, as well as numerous processes in the body. Good sources of fiber, it is also a significant source of potassium preventing and treating hypertension.

Raw in sweet or savory salads. Cooked, you can make marmalade and delicious cakes. Its intense colour also makes its juice appealing for breakfasts. Lastly, you can use it in cocktails, syrups, sorbets, sauces, vinaigrettes.

Pleurotus ostreatus, also called ‘’Pearl Oyster’’ or ‘’Tree Oyster’’, the Oyster Mushroom is a common edible mushroom that was first cultivated in Germany as a subsistence measure during World War I.

The latin name Pleurotus ostreatus means "sideways oyster", referring to the oyster-like shape of the mushroom. Similar in color to raw oysters, some even say that its taste is also similar.

Cook Oyster Mushroom long enough because its pulp is quite firm. It can then be seared, braised or sautéed, alone or mixed with other wild mushrooms, fish or white meat. It is also greatly pairing with all egg preparations including omelettes.

Plum is said to be one of the first cultivated fruit by humans. While Prunus domestica is related to East European and Caucasian mountains, Prunus salicina and Prunus simonii are originated in Asia.

Plums are medium size fruits, between 2 and 7 centimetres in diameter, often oval shaped with a firm and juicy pulp. Mirabelle plum, also known as cherry plum, are dark yellow fruit with a flecked skin, often oval shaped with a smooth-textured flesh. Mirabelle Plum are richly sweet but with a tangy flavor.
