【🌴COCONUT PANCAKES🥞】
INGREDIENTS 😋
1 cup whole wheat pastry flour or whole wheat flour
2 tablespoons unsweetened shredded coconut
1 tablespoon coconut sugar
2 teaspoons baking powder
¼ teaspoon salt
1 cup light coconut milk or 1 cup fresh coconut water from a mature coconut
1 egg
1 ½ tablespoons melted coconut oil
INSTRUCTIONS
1) Mix together the dry ingredients (flour, shredded coconut, sugar, baking powder and salt).
2) In a separate bowl, whisk together the liquid ingredients (coconut milk, egg and oil).
3) Pour the wet ingredients into the dry and stir until combined.
4) Lightly oil the cooking surface, using a ¼-cup measure, scoop the batter onto the warm skillet. Cook for 2 to 3 minutes until small bubbles form on the surface of the pancakes and flip. Cook on the opposite sides for 1 to 2 minutes, or until lightly golden brown.
5) Serve with coconut syrup, sprinkle extra coconut flakes and top with fresh fruit for a stunning presentation.

2茶匙發酵粉

1.5湯匙椰子油
制作方法:
1)將麵粉,椰絲,糖,發酵粉和鹽混合。
2)在另一個碗中,將椰子奶,雞蛋和油一起攪拌。
3)將全部配料倒入鍋中並攪拌直至混合。
4)煎鍋上落小許油,放1/4分量的麵糊。煎2至3分鐘,直到煎餅表面形成小氣泡並翻轉。在另一面煎1至2分鐘,或直至變成金黃色。
5)可配上椰子糖漿,撒上椰子片,並放上新鮮水果。
