☀️ Summer is right around the corner and the fresh meals season officially is about to begin. 🌊

🍃 This basil pesto it’s a great way to level up any of your fun creations, it’s also vegan and Dairy-free. 🤩

Pour it over your bake carrots or veggies, served with a fish filet or pasta, have it with crackers or top it to any dips of your choice 😜

🍃 Dairy-Free Pesto🍃

2/3 cup of 🫒 oil
1/2 cup of cashews
2 cups packed of fresh basil 🌿
1/4 cup of Nutritional Yeast
2 tablespoons of lemon juice
Zest of one lemon
1 garlic clove
Salt & Pepper to taste

🍃In a skillet over low heat toast gently the cashews for 5minutes. Make sure you don’t burn them.

🍃In a food processor, add the cashews and the remaining ingredients. Combine it slowly so you don’t burn the fresh herbs

🍃Finish with 🍋 juice, salt & pepper to taste. Enjoy !!

if you are living in the caribbean and you have a dairy free diet, here's a great milk substitute for you.

🥥 Coconut the fruit of life, is rich source of medium-chain-triglycerides (MTC) which is the type of fat that absord direcly from the small intestin and used as a source of enerfy for the body. A powerfull antioxidant that may help protect the cell from oxidative damage and many essential minerals such as manganese, copper, iron and selenium.

Homemade coconut milk 🥥
Ingredients
2 cups of shredded coconut
4 ½ cups of warm water
Pinch of salt
½ tablespoon of vanilla extract
1 cinnamon stick
2 star anise

Material needed
High speed blender
1 big bowl
Nut milk bag or fine mesh strainer
A glass container with lid
A glass jar with lid

Instructions
1-Warm the water with the cinnamon and star anise
2-In the blender, add the coconut, warm water and salt. Blend well, if the mixture is to thick add more water.
3-In a large bowl pour the mixture over a nut milk bag or a fine mesh strainer and extract all the liquid. Then add the vanilla
4-Transfer to a sealed glass container, let it cool then refrigerate. It will keep up to 5 days in the refrigerator or a month in the freezer.
5-When using it, you can add sweetener or flavor of your choice such as coconut sugar, cacao or smoothies with fresh fruits.

♻️ Dry out the pulp and keep it in a glass container and it can be used to top smoothies bowls or baked good.

To the moms out there fighting their battles that no one knows about, to the mothers with kids that need special attention, to every mother that’s had no clue on what they are doing but still doing their best in this journey. Happy mothers’ Day to you all!! Superhero ✨🦸🏽‍♀️🦸🏽‍♀️✨

Being a mother with a child diagnosed with Rheumatoid arthritis, life can be difficult sometimes, seeing your child been playing one day to not being able to get out of bed the next day can be overwhelming, not only for the child but also for the parents. Not being able to help is devastating, that’s why aside from medical attention the only role I choose to play is to cook to make her feel better, To give her the strength so she’s able to fight her own battles, and choose food that may help alleviate her pain. For a twelve-year-old, it's difficult to make the food transition from the standard way of eating such as bread, cereals to veggie soup for breakfast. that why I try my best to create tasty recipes so she can develop a new palette for food.

My creamy cashew soup, it's well appreciated, is dairy-free, and very easy to make 🥣

INGREDIENTS

8 big leeks, wash then sliced
1 small onion, chopped
2 garlic cloves, chopped
¾ cup of cashew, soaked, drained and rinsed.
Juice of half of lemon
1teaspoon of nutritional yeast
1 tablespoon of coconut oil
Salt & pepper to taste
Fresh parsley for the garnish
Water

INSTRUCTION

🍃In a pot, heat 1 tablespoon of coconut oil over medium heat, add the onion, garlic, and leek. Sauté for 5 to 8 minutes or until softened,

🍃Add the water enough to cover the ingredients, add salt and pepper to taste, and bring to a boil. Let it simmer for about 10-15 minutes

🍃Add the content to a blender, then add the cashew, lemon juice, and a teaspoon of nutritional yeast. Blend until smooth and creamy. Adjust the salt to taste if needed

🍃Serve and finish with some fresh chopped parsley. Enjoy !!!
