To the moms out there fighting their battles that no one knows about, to the mothers with kids that need special attention, to every mother that’s had no clue on what they are doing but still doing their best in this journey. Happy mothers’ Day to you all!! Superhero ✨🦸🏽♀️🦸🏽♀️✨
Being a mother with a child diagnosed with Rheumatoid arthritis, life can be difficult sometimes, seeing your child been playing one day to not being able to get out of bed the next day can be overwhelming, not only for the child but also for the parents. Not being able to help is devastating, that’s why aside from medical attention the only role I choose to play is to cook to make her feel better, To give her the strength so she’s able to fight her own battles, and choose food that may help alleviate her pain. For a twelve-year-old, it's difficult to make the food transition from the standard way of eating such as bread, cereals to veggie soup for breakfast. that why I try my best to create tasty recipes so she can develop a new palette for food.
My creamy cashew soup, it's well appreciated, is dairy-free, and very easy to make 🥣
INGREDIENTS
8 big leeks, wash then sliced
1 small onion, chopped
2 garlic cloves, chopped
¾ cup of cashew, soaked, drained and rinsed.
Juice of half of lemon
1teaspoon of nutritional yeast
1 tablespoon of coconut oil
Salt & pepper to taste
Fresh parsley for the garnish
Water
INSTRUCTION
🍃In a pot, heat 1 tablespoon of coconut oil over medium heat, add the onion, garlic, and leek. Sauté for 5 to 8 minutes or until softened,
🍃Add the water enough to cover the ingredients, add salt and pepper to taste, and bring to a boil. Let it simmer for about 10-15 minutes
🍃Add the content to a blender, then add the cashew, lemon juice, and a teaspoon of nutritional yeast. Blend until smooth and creamy. Adjust the salt to taste if needed
🍃Serve and finish with some fresh chopped parsley. Enjoy !!!
