Please welcome your new consultant Tracy King who will be taking over my Ballina group from next Saturday.

Please follow her: Slimming World Tubbercurry & Ballina Sat AM group

Tracy will be there for you, at normal 8.30am - 11.30am times every Saturday to support you on your Slimming journey.

Tracy comes with years of expertise, she was in fact my consultant back in the day. With her help, inspiration & and support, I realised my dream when I lost five stone... I can not recommend her highly enough, and I'll always sing the Slimming World plan praises, it works 100%.

Today I've hung up my scales for the last time and feel.. (I honestly don't know how I feel ...)
I'm saying farewell (not goodbye), as I depart for personal reasons, to my friends, members and colleagues in my Slimming World family 😢.

I've had eight amazing years in Ballina, I've grown my friends circle enormously, I've totally enjoyed seeing people putting their trust in me and the company (of course) and moving closer and closer to their goals & dreams. I am like a proud mammy to so many of you 😁.

On a personal note, I have grown so much in confidence over my 8 years, once a shy person (yes, honestly I once was.. 😂), Slimming World changed my life in so many good ways, that's thanks to you that put your faith in me, thank you. I will miss everyone so much, but we'll meet again, no doubt.

I can’t possibly thank my group so much for all my fabulous parting gifts, I'm blown away by such generosity... I am cherishing all of them. You know who you are, you are great! ❤️

My group will continue exactly as normal each Saturday with a fabulous new consultant: Tracy King, I will post her details separately, so you can screen shot them.

Sending my heart full of love to everyone reading this, may your life be abundant in great days, good health & blissfull happiness.
May all your dreams come true.

Hands up if you love Choc Sponge & Custard.. 😋

I hear ya! at only 4 Syns each you can have your cake, eat it, sing about it and wear the T-Shirt too at Slimming World. ❤

Ingredients
5 medium eggs, separated
3 level tbsp sweetener granules
1 tsp vanilla extract
60g self-raising flour
30g cocoa powder
½ tsp baking powder
25g milk chocolate
250g chilled low-fat custard

Method
Preheat your oven to 190°C/fan 170°C/gas 5.
Line a 20cm x 20cm tin with baking paper. Place a large, heatproof bowl over a pan of boiling water, then turn off the heat. Put the egg whites and sweetener in the bowl and beat until they form stiff peaks.

Add the egg yolks and vanilla extract and whisk for 2-3 minutes, until thick and glossy.
Remove the bowl from the pan, then sift and fold in the flour, cocoa powder and baking powder using a metal spoon.
Pour the sponge mixture into the tin and bake for 10-12 minutes, until risen and set.

Allow to cool slightly.
Meanwhile, melt the chocolate in a heatproof bowl over a pan of gently simmering water. Drizzle the melted chocolate over the sponge and leave to cool slightly, heat the custard.
Cut the sponge into 8 equal portions, serve & enjoy.
