If you’ve far too many Easter eggs hanging around and the temptation is always there to eat it yourself (just to save them from eating it all of course 🥴) then it might be time to put that “waste not want not” head to better use. Make your own chocolate spread by melting chocolate over boiled water. Spread a layer of almond nut butter onto a slice of wholemeal bread. Spread the melted chocolate over it and serve. The nut butter will provide some protein and fibre which will help stabilise their blood sugar.

Well we did it. January is behind us and February feels like it’s going to be the start of something good. Take it one day at a time. Focus on what you want to achieve and each day practise habits that will get you there. There’s no magic wand. Just a good healthy manageable plan and determination to stick with it. Best of luck everyone and look after yourself. If you need help I’m still seeing clients through zoom. So feel free to private message or email vitaleireland@gmail.com
Best wishes, Caithriona.

Hi all, Happy new year. I received this book through the post today from Lidl with a 7 day guide. It’s all very healthy stuff and I really like the look of some of the recipes. I have a few pounds to lose after Christmas so I’ll need to tweaks these recipes slightly to make sure they don’t spike my blood sugar. If anyone sees something they like in the book and are wondering if it fits with the low GL weight loss plan feel free to drop me a message. With the latest lockdown I can’t see clients in person but I’m happy to support you online if I can. 👍 Best wishes, Caithriona.

Here are some Top Tips for avoiding weight gain during the lock down:

1. Have a good breakfast. Porridge with seeds is a great start. Or eggs 🥚 scrambled or poached with 1 slice of bread.

2. Eat regularly. We often think we’re great if we don’t eat much during the day but I can assure you under eating will only lead to a slower metabolism and weight that is harder to shift. I recommend eating every 3 hours.

3. Keep your blood sugar stable so avoid fast releasing carbs.

4. Drink water. Ideally 2L a day but if you’re exercising you might need to go up to 3L. More than that is probably too much for most body types.

I don’t worry about counting calories but I do count sugar and fast carbs. I’m sorry to say wine is a carb 😞.

Between Easter and lockdown it’s tough to stick with a healthy eating plan. I’m feeling that myself. Even though I’m getting out for a walk daily it can’t undo the bad habits that are creeping in. Without the accountability of a weekly weigh in it can be even harder. I don’t want to profit from everything that’s going on so if anyone is struggling and would like a bit of support I’m thinking about creating a FREE private Facebook group for past or present clients of mine or Marys. Just a private place to post pictures of our meals and I’ll share daily tips and reminders about how to follow a low GL plan and be there to answer your questions. I know it would help me become more accountable for what I’m eating and hopefully it could do the same for you. Private message me if you would like to be included and you’ve either attended 1:1 coaching with us or attended a group programme with us before. I’d like to get it started this week for the next 4 weeks. 👍

Found this smoothie mix buried in my freezer. Made it on water instead of apple juice (the back of pack called Apple juice but I know that would just up the sugars too much and I want to keep the glycemic load low). With the mango it was sweet enough. It’s missing a form of protein so I just had a few nuts on the side.

Things are tough right now. That’s for sure and I’ve been doing my fair share of comfort eating. Look the other way if you see 3 tubes of Pringles in my recycling bin this morning 😊 But today is a new day and I can continue to use that excuse or I can realise that my usual excuse that I’m too busy to cook from scratch won’t float right now and I can use this as an opportunity to put some good habits in place. Porridge, with flaxseed and berries for breakfast is a great way to start your day. No blood sugar spike, no sugar crash. Just a full tummy until small break. Sorry I’m home schooling at the moment 😊. Hope everyone is keeping well and looking after yourselves. Best wishes, Caithriona.
