NURTURING WINTER WELLBEING.

It's apple harvest time! Apples have long been associated with Samhain festivities; fun indoor games and the making of a range of apple-based dishes and desserts- so seasonal and fresh at this time of year.

Apples grow very well in Ireland and particularly this year they are dripping off the trees. If you do not have your own apple trees, you can buy delicious seasonal fresh Irish apples in most grocery stores or better still ask your apple harvesting neighbours for some.

The health benefits of apples include a good source of fiber, vitamin C and various phytonutrients that have cardiovascular benefits. They are also an important anti-inflammatory food because they contain quercetin, an anti-inflammatory antioxidant. With the addition of cinnamon to help balance blood sugar, apple dishes are a treat that are good for you too!
Give this easy dish a try, if you like it let me know if you like it! I would substitute the coconut oil for a nob of butter- just cos I'm Irish. And you could add a little water, cook for a little longer and mash into an apple sauce. So versatile and yummy!
