Vegan Is The New Black

Supplying protein balls, PB & J cups and chickpea blondies in Cork (My Goodness, ABC & Boru cafe). I have always had a passion for cooking and baking, I am partial to cake! I completed various cookery courses and a Nutrition course so I am aware of what my body needs to maintain a healthy balance, not all the recipes I post are healthy, some are comfort food but I want to show you how it is possible to adapt almost any recipe to be plant based and gluten free :)
I am from Ireland and I love to travel (mainly to discover new foods!). I lived in Toronto, Canada from 2015 - 2017 where there was plenty of Vegan and Gluten Free options. I know it can be more limited depending on where you are so I want to share recipes that include ingredients that shouldn't be hard to source. Please feel free to share pictures of my recipes that you made at home on the page.

I first tried in Kildare Village a couple of years ago and fell in love, it reminded me of where I worked in Canada, making kale & grain bowls.

I feel like Cork has gotten so much better since Monday, when they officially opened on Winthrop’s St.

I got the make your own bowl, rice, kale, tofu, Bombay spuds, pickled onion, grilled corn and satay sauce 👌

Great, healthy addition to Cork 🎉

Totally forgot to post picture of when we went to in Dublin (last year 😬)

I believe they are the only dedicated gluten free restaurant in Ireland (I could be wrong) but they are also vegetarian, with a huge amount of vegan options.

This is one of my sisters favourite spots, the menu I posted is an older one but I’m sure their current offerings are great.
I love seeing a set menu or early bird offer 🙂

Love these new gluten free buns from Promise, they’re so soft. I made BBQ jackfruit by frying onion, garlic, cinnamon, cumin seeds, chipotle and tamari, then added a can of tomatoes, maple syrup and seasoned, added the jackfruit and cooked down.
I had Dijon mustard on one bun, pineapple chilli jam on the other, slaw, melted cheeze, jackfruit, lettuce and a GF onion ring from Dunnes Stores

Had lunch today in
I got the toasted squash & cashew flatbread (but on GF bread), we shared some spuds and dip, delish and I had a
I’m not in Cobh often but they change their menu regularly, it’s nice to have a vegan option that’s not just falafel 😅
Stopped in Midleton afterwards to get a slice of GF coffee and carrot cake from , made by Michelle’s bakery 🧁

Noodle broth for early dinner. 🍲
I had some left over satay dip from yesterday so decided to make a broth.
I fried sliced garlic in coconut oil, added 500ml veg stock (water & 2 tsp ), 2 tsp Miso paste, 1 tsp tomato paste, fresh coriander, 2 tbsp satay dip, juice of 1/2 a lime.
I let the broth simmer for 10 mins, I fried chestnut mushrooms in sesame oil with maple syrup, tamari & sesame seeds.
I added rice noodles to the broth for 10 mins to cook along with some kale.
Served in a bowl topped with crumbled cooked .ie tofu, sesame mushrooms, kale chips, raw carrot, fresh coriander, a squeeze of lime and a drizzle of salsa Macha.

A couple of pics from Galway.
We had breakfast in .galway they kindly made gluten free pancakes, they have a seperate frier for gluten free things, last time I was there I had the vegan fish and chips it was so good, esp their homemade chips 🤤.
I had a mocha, the other dish pictured is the Smokey beans and spuds with cashew cream. I had a slice of lemon & poppy seed cake, having cream with the cake was a nice touch.
We drove to Cong to see some spots where “The Quiet Man” was filmed, we had a drink in . Such a beautiful woods to walk around in 🌲

Jackfruit burger 🍔
Gluten free bun, jackfruit, melted cheeze, rocket, home made slaw, sliced avocado, crispy onions

The jackfruit was cooked with spices, tomatoes, chipotle cholula sauce, maple, tamari and veg stock.

I was in Dunnes and saw the gluten free pastry and realised I haven’t had pastry in a while.
For the filling I fried celery, garlic, chestnut mushrooms and spinach. Added a teaspoon of veg Boullion, squeeze of lemon and soya cream.
There was also tofu in the pastry, topped with thinly sliced tomato and cheese.
Served with roast spuds, minty peas and gravy 🍽️

✨ Tip: if you get the chickpea Blondie and microwave it for 15 - 20 seconds and serve with vegan spray cream and it’s a drizzle of maple syrup= satisfying dessert ✨
