Supplying protein balls, PB & J cups and chickpea blondies in Cork (My Goodness, ABC & Boru cafe). I have always had a passion for cooking and baking, I am partial to cake! I completed various cookery courses and a Nutrition course so I am aware of what my body needs to maintain a healthy balance, not all the recipes I post are healthy, some are comfort food but I want to show you how it is possib

le to adapt almost any recipe to be plant based and gluten free :)
I am from Ireland and I love to travel (mainly to discover new foods!). I lived in Toronto, Canada from 2015 - 2017 where there was plenty of Vegan and Gluten Free options. I know it can be more limited depending on where you are so I want to share recipes that include ingredients that shouldn't be hard to source. Please feel free to share pictures of my recipes that you made at home on the page.

Quick trip to Galway last night for Skellig supporting Their Last Stop in the Cellar.

Picked up this delicious from Evergreen Healthfoods

We stayed in because they are know for having lots of gluten free options, lovely room, we had breakfast there. My hair was amazing after washing it in the hotel, must be the Galway water!

Walked around the market this morning & had a lovely coffee in ☕️
Galway is always a joy

Had such a great start to the week.
I wanted to see sombr for ages and I happened to get one ticket last week, my amazing husband drove me up to Dublin from Cork and brought me home afterwards (even tho he had work in morning 😩). Sombr was so amazing, sooo glad I went.
We had dinner first in .ie mushroom tacos and Blanco Niñotortilla chips and guac to share 👌

Doesn’t seem like 10 years ago but it was nice to look for 2016 pics and see that I was living in Toronto and we visited New York. I also spent all my wages on make up in , I miss doing all the make up looks.
So many amazing vegan spots in Toronto that I miss

Amazing experience last night in The Porter House, Killarney, before Kneecap.
They had a selection of vegan options and allergens clearly marked. Staff were helpful, lovely atmosphere.

We got three dishes to share:

Buffalo cauli wings with dip
Mushrooms on GF toast
Nozzerela skinny fries with herbs and garlic dip

They open from 5pm, never disappoints

What a random day of eats looks like for me.
Seeing as I’m still asked “what do you eat” because I’m vegan 😅
Breakfast: is usually coconut yogurt and berries with lemon balm tea and electrolytes but this day I had gluten free toast with chocolate hazelnut spread and banana.
Lunch: I was craving a cooked breakfast so I used air fried spuds from the previous night, tomato sauce I had made, scrambled .ie Tofu with spinach and GF toast from
Dinner: I made a coconut broth using light coconut milk from , miso, yellow curry paste, sweet potato, noodles, Brocolli and tofu 👌

There is always a coffee in there and treat, 4th pic features my PB & J cups (available in ABC & My Goodness, English market).

Winter salad 🥗
This time of year doesn’t scream salad but I was craving something nutritious so I made the salad half warm.
Mixed leaves, roast sweet potato, avocado, vegan feta Violife I air fried .ie Tofu and tossed it in satay sauce I had left over from yesterday, a squeeze of lime on the salad, oh and pomegranate seeds because reminded me what a great addition they are to meals, then topped with roasted hazelnuts 👌

Dosa!
I haven’t had a dosa in years, I’ve been meaning to try the one in .store in for ages but I’m rarely in the area.
This was the vegan dosa made with rice flour and I think lentil flour, filled with spiced potato, the side of lentils were delicious to dip it in, there was a coconut and spicy dip too.
