Chicken Skewers with Yogurt Dip (Serves 2 | Free Food)
You’ll need:
• 2 chicken breasts, cut into bite-sized pieces
• 2 cloves garlic, crushed
• Juice of ½ lemon
• 1 tbsp low fat natural yogurt
• 1 tsp smoked paprika
• 1 tsp dried oregano or mixed herbs
• Salt & black pepper
For the yogurt dip:
• 4 tbsp 0% Greek yogurt
• Juice of ½ lemon
• 1 tsp dried mint or fresh parsley
• ½ garlic clove, crushed
To serve:
• 2 x 60g pittas
• Sliced cucumber, tomato and salad. We picked up this fab local salad from 🥬
What to do:
Mix the chicken with the garlic, lemon juice, yogurt, paprika and herbs. Season well and leave to marinate for at least 30 minutes.
Thread onto skewers and grill or pan cook until golden and cooked through. (5 mins either side should do it)
Mix all the yogurt dip ingredients and season.
Warm your pittas, fill with greens, add the chicken skewers and drizzle generously with that gorgeous yogurt dip.
