π Coconut Lime Chicken with Rice π₯₯π
This creamy, zesty Coconut Lime Chicken with Rice is a tropical delight, perfect for adding a burst of flavor to your weeknight dinners!
Ingredients π
4 chicken breasts or thighs π
1 can coconut milk (13.5 oz) π₯₯
2 tbsp lime juice π
1 tbsp lime zest π
2 cloves garlic, minced π§
1 tbsp soy sauce πΆ
1 tbsp olive oil πΏ
1 tsp ginger, minced (optional) π±
Salt & pepper, to taste π§
1 cup jasmine or basmati rice π
Fresh cilantro for garnish πΏ
Lime wedges for serving π
Instructions π
1. Marinate the Chicken
In a bowl, combine coconut milk, lime juice, lime zest, minced garlic, soy sauce, ginger (if using), salt, and pepper.
Add the chicken to the mixture and let it marinate for at least 30 minutes (or overnight for extra flavor). π₯₯π
2. Cook the Chicken
Heat olive oil in a skillet over medium heat.
Remove the chicken from the marinade and cook for 5-7 minutes per side, until golden brown and cooked through. Set aside. ππ₯
3. Prepare the Rice
While the chicken cooks, prepare the rice according to the package instructions. Fluff with a fork when done. π
4. Make the Sauce
In the same skillet, pour the remaining marinade and bring it to a simmer.
Let it cook for 5 minutes, stirring occasionally, until it thickens slightly. πΏ
5. Assemble
Serve the chicken over the rice.
