Hi guys this little lady is the reason I havenโ€™t been active on social media for a while. Alessandra came into our lives 9 weeks ago and has kept us fairly busy since!
Hopefully Iโ€™ll get back to taking clients in the new year but until then Iโ€™m on my own WeightLoss journey.
Eat Better Not Less has always been my motto and I believe is the best way to shed any excess pounds so Iโ€™ll be sharing the recipes that Iโ€™m using to help me reach my goal weight on the days I get a chance to!
There has been lots of empty calories consumed (and enjoyed ) over the last few months but now I feel is the time to get back to a healthier diet. So until Iโ€™m in a position to take clients on again Iโ€™ll be posting the different healthy (ish) meals and snacks Iโ€™ll be eating. Happy Friday everyone ๐Ÿ’•

This morning I had Chocolate and Banana Baked Oats
I love having oats for breakfast as they are so filling and satisfying
Ingredients
40g Oats
150ml unsweetened almond milk or milk of choice
2 tsps cacao powder
1 small banana
Option to add a teaspoon of honey or maple syrup ( I didnโ€™t bother as banana makes it sweet enough for me)

To make
Preheat oven to 180 degrees and put all the ingredients into a blender and blitz, then pour into a small oven proof dish. (Blitzing first is optional, you could just stir the ingredients together in a bowl instead)
I baked in the oven for 30 mins and had it with strawberries, natural yogurt and a tablespoon of desiccated coconut sprinkled over
It was yummy

Baked Oats with yogurt and strawberries
Another way to include oats in your diet.
Thanks to their nutrition profile especially their fibre (beta-glucan) oats have tons of health benefits including;
Helping with weight control - keeps us feeling fuller for longer
Heart healthy - known to help lower cholesterol
Gut healthy - helps keep bowel movements regular

This morning I made enough for 4:
175g Oats
1 mug of Almond Milk (use milk of your choice)
2 eggs
Handful of frozen raspberries (any berries will do fresh or frozen)
Half teaspoon cinnamon
1 tablespoon maple syrup
Half teaspoon baking powder

To make:
Preheat oven to 170 degrees, grease and line a small casserole dish or 2 ramekins dishes.
Put oats into a bowl, add in the milk and beaten eggs and mix well. Next add in the berries, cinnamon, maple syrup and baking power and stir until all combined.
Spoon out into your lined dish / dishes and place in the preheated oven for 25-30 minutes.
Enjoy on its own or with a tablespoon of yogurt and fresh berries

Chocolate Chia Seed Pudding topped with Donnelly strawberries (our local strawberry farm).
Yum and just whatโ€™s needed after the long weekend.

To make I put 3 tablespoons of whole chia seeds into a bowl, about 200ml of almond milk and a tablespoon of vanilla flavoured organic yoghurt. To get the chocolate flavour I added a teaspoon of cacao powder, gave it all a good stir and left for 20 minutes to give the chia seeds time to plump out.

Fish Curry Thai Style
With the addition of ginger, lime juice and cucumber this curry is a little different from my normal quick fish curry.
I like to have a lighter dinner on a Monday night after the weekend and this dinner is just that.
It also makes a perfect quick and nutritious midweek meal.

Ingredients
1 onion diced
1 garlic clove minced
1 thumb piece ginger Peeled and grated
2 heaped teaspoons of curry paste More if you like your curries really hot
1 tin of chopped tomatoes
1 tin of coconut milk
1 cucumber Slice in half and using a teaspoon remove all the seeds then slice into small chunks
Juice from 1 lime
1 tablespoon of Maple Syrup
4 fillets of white skinless and b***d fish cut into chunks. (I used basa fillets I bought from Dunnes)

Heat a tablespoon of olive oil in a large pot and add in the onion, garlic and ginger, let cook over a medium heat for 5 minutes.
Next stir in the curry paste and let cook for a further 2 minutes, then add the tin of tomatoes, coconut milk, cucumber, maple syrup and juice from the lime. Bring to a simmer for about 5 minutes before adding the fish
It should only take 3-4 minutes for the fish to cook through

More Protein Balls!
Well my appetite is increasing all the time and to try avoid treating myself too much (there are definitely more treats in my diet these days!) Iโ€™m eating as much protein rich foods and snacks as I can. Protein helps keep us fuller for longer.
Having tasty healthy treats on hand is really helpful.
With ingredients such as peanut butter, protein powder, chia seeds and oats These balls are seriously packed with protein, healthy fats and fibre.
They taste gorgeous too and are perfect for when Iโ€™m on the go or just fancy a mid morning snack.

Ingredients are:
150g Oats
25g Vanilla Protein Powder
25g Chia Seeds
150g Smooth Peanut Butter (or any nut butter)
4 Tablespoons Maple Syrup
4 Tablespoons Almond or Coconut Milk
50g Dark Chocolate Chips (you could use raisins here instead)

To Make put all the ingredients into a food processor and blitz, if mixture is too crumbly to form a ball then add another tablespoon of milk or maple syrup. You should make about 16 balls.

Quinoa for lunch, with leftover salmon and roasted vegetables from yesterday. I just added in a handful of pine nuts and some sweet corn.

Quinoa is often described as a superfood and with good reason, it is a great source of plant protein, fibre and numerous other nutrients such as iron, magnesium and folate. Also gluten free.
One of quinoas health benefits is it helps in reducing cholesterol thanks to its fibre content.

Leftovers can make a tasty lunch / dinner the next day. I chopped up yesterdayโ€™s roasted carrots and parsnips and salmon darne and mixed through the boiled quinoa and then stirred in sweet corn and pine nuts.
It was delicious
