Hello fellow honey lovers!

One of the question I get asked by customers a lot is: “Why does honey crystallise and is it still good to eat?”

So let me explain…

Real honey is made from plant nectar by honeybees. It contains about 16-20% moisture, 80% natural sugars (mainly fructose and glucose), and various beneficial components such as pollen, propolis, and enzymes.

The term “Raw Honey” means the honey is minimally filtered and not heated above body/ hive temperature. It retains its pollen and other natural components, which can lead to faster granulation.

The type of nectar collected by the bees influences the flavour and composition of the honey. Some nectars producing honey that granulates quickly due to higher glucose content. This granulation is a natural process and often seen as a sign of authenticity.
Typically most spring honeys will be pale in colour and set quickly. A summer crop from Blackberry blossom nectar stays runny for a long time.
Getting a crop from mixed wildflowers and flowering bushes here in the Cooley mountains it’s always a bit of a surprise if the honey stays runny or sets. Regardless of its consistency I have to say the mountain honey has much more taste to it than lowland honey. So even if there is smaller yields up here far away from commercial crops you always get the maximum flavour and quality from our Magic Hill Honey 💗

As always, jars are 10eur each and I will deliver to Dundalk and Cooley area for 2 jars or more and lovely Janet from Macs Coffee stocks my honey too. Pop in for a brew and a sweet treat!

If you feel like venturing out to the Cooleys feel free to come to my door. Please let me know in advance though as I might be out at the hives! 🐝🐝🐝

A different kind of insect altogether. Can’t decide which sound is more relaxing - the humming of happy bees or the screeching of cicadas ☺️

And this is what a swarm of honey bees sounds like at take-off! Quite impressive eh?
May is swarm season where honey bee colonies reproduce by splitting into two and half of the colony leaves with the old queen in search of a new home.
Bee swarms will cluster in trees, fence poles, garden swings etc in a big ball of bees while they send out scouts to find them a new abode.
If you do find a swarm of honey bees don’t be alarmed. When left alone swarms are not aggressive as they have no hive to defend. They will move on after a while at their own accord.
You can however contact swarms.ie, a network of voluntary beekeepers that come and take the bees safely away. Enjoy the rest of the weekend folks. I’m off to do some swarm prevention at my own hives 💪😁
