🍏It’s time for BlackBerry & Apple Pie 🥧
With the recent fine summer we’ve been able to collect a load of gorgeous blackberries in the last week - there’s still some left though! This is so delicious and so satisfying to make after collecting all the juicy blackberries.
🍏 Apple & Blackberry Pie (with Dr Coy’s Stevia)

Ingredients

For the filling
- 5 medium apples (Bramley or Granny Smith for tartness, peeled, cored & sliced)
- 200g fresh blackberries
- 2–3 tbsp Dr Coy’s Stevia (adjust to taste)
- 1 tsp ground cinnamon
- 1 tsp lemon juice and 1 tsp of lemon zest
- 1 tbsp plain flour (to thicken juices)

For the pastry
• 250g plain flour
• 125g cold butter (cubed)
• 2–3 tbsp cold water
• 2 tbsp Dr Coy’s Stevia

Optional topping
- 1 egg, beaten (for glazing)
- A sprinkle of ground almonds or oats (adds crunch)

Method
1. Make the pastry
Rub the flour, stevia, and butter together until it resembles breadcrumbs.
Add cold water gradually and bring it into a dough.
Wrap in cling film and chill for 30 mins or longer!
2. Prepare the filling
In a bowl, toss apples with lemon juice, cinnamon, flour, and stevia.
Fold in blackberries gently.
3. Assemble the pie
Preheat oven to 180°C (fan 160°C).
Roll out half the pastry and line a 20–23cm pie dish.
Spoon in the apple-blackberry mixture.
Roll out the remaining pastry and place on top. Seal edges with a fork.
Cut a few small slits in the centre to let steam escape.
4. Bake
Brush with beaten egg.
Bake for 40–45 minutes, until golden brown and bubbling at the edges.
5. Serve
Best enjoyed warm with Greek yoghurt, cream or a scoop of vanilla ice cream (sugar-free if you like).

Still craving soup but want to keep it light and fresh? Say hello to your new spring fave! 🍃
We shared a reel on this recently but made again over the weekend as it’s so easy and satisfying. This vibrant Pea & Watercress Soup is bursting with flavour and powered by Dr. Coy’s Organic Veg Bouillon – it’s green, it’s clean, and it comes together in minutes! 💚

This vibrant Pea & Watercress Soup is a quick and simple recipe:
All you need is 600g of frozen peas, 100g of watercress + 1 litre of Dr.Coy’s Organic Vegetable Bouillon!
Add in a handful of mint leaves and blitz with a hand blender
That’s it!
You can top with some mint and and a drizzle of olive oil.

Spring in a bowl? Yes please.🌿
This colourful CousCous Salad is your fridge-clearing, flavour-packing, crowd-pleasing hero.
Infused with Dr. Coy’s Organic Vegetable Bouillon and topped with a zesty honey mustard lemon dressing — it’s fresh, filling, and ridiculously easy to make.
Perfect with a slice of sourdough and a sunny day. Also works as a gorgeous side with your an Easter dinner!
Ingredients 4 portions :
For the base add Approx 120g of
CousCous as the base (160ml of Stock with 1/2 teaspoon of Dr. Coy’s Vegetable Bouillon)
Then add in what your hearts desire or what you find in your fridge ;-) for example cucumber, pomegranate, olives, feta, red onion and pea shoots, but anything goes here!
Dressing: Honey Mustard lemon Dressing:
Olive Oil - 600ml
Honey - 150ml
Dijon Mustard -60ml
Fresh lemon juice 120ml
salt - 1 teaspon
Black pepper - 1/2 tsp

Whisk together well the honey, mustard and lemon juice. Slowly drizzle in the olive oil while whisking.
Add salt and pepper to taste. This should store well in a sealed container for 2-3 weeks in fridge.

It’s National Siblings Day somewhere, so we thought we’d say a quick hello from us!
(Thanks for the heads up !)

I’m Alison, and this is my brother Aaron. We never imagined working together—living in different countries, doing our own thing—until I moved back to Ireland over 13 years ago and started Dr. Coy’s. Aaron joined not long after… thanks to a biking accident and a bit too much free time!

These days, we’re a proper team—bonded by good food, the great outdoors (hello Wicklow Mountains), and a shared love for what we do.

A big welcome to all our new followers (thanks !), and thank you to everyone who tags us in your delicious creations. We love seeing them! 💚
