💜 Not sure if you’ll be out and about this weekend? 🌧️
With another storm on the way and the weather keeping us guessing (as always here in Ireland 😅), sometimes the best plan is… no big plans at all ✨
A slower morning, a cosy afternoon,
and maybe a little something homemade to lift the mood 💛
I baked these low sugar pistachio cookies today —
simple, comforting, and just the right touch of sweetness without the overload 🍪
Because self-care isn’t always a treatment…
sometimes it’s the quiet moments,
a warm kitchen,
and something made with love 🌿
💜Here’s the recipe if you’d like to try them:
• 100g ground pistachios
• 100g self-raising flour
• 100g light brown sugar
• 2 eggs, beaten
• 100g butter, melted
• 100g whole pistachios
Whisk the eggs with the sugar until light and foamy, then gently whisk in the melted butter.
Add the flour and ground pistachios, then stir in the whole pistachios.
Preheat the oven to 180°C.
Line a baking tray and place small walnut-sized spoonfuls of the mixture onto it.
Bake for around 10 minutes until lightly golden ✨
Perfect with a cup of tea on a wild Irish day 💛
