In the late 1970s, Al Carter, a professional trapeze artist from the United States, discovered that his children had unusually strong muscles from frequently bouncing on a trampoline.

He realized that this form of weightlessness exercise builds muscle and has numerous health benefits.

Carter wrote the book "The Miracles of Rebound Exercise," promoting rebounding as a low-impact, effective exercise for improving overall fitness, lymphatic circulation, and muscle strength.

Also studies by NASA were conducted to find a healthy way for astronauts to recover the loss of bone and muscle mass after going into space, which is why there is a lot more research on the benefits beyond how many calories you burn while jumping up and down.

Through their research, NASA found that jumping on a rebounder increases G-Force during the exercise and also increases lymphocyte — aka, the lymphatic system — activity, which is great because the lymph system needs a little help to get things moving.

BREAD PUDDING

Ingredients:

• 4 cups cubed day-old bread (use a vegan bread such as sourdough or whole wheat)

• 2 cups unsweetened almond milk (or any other plant-based milk of your choice)

• 1/2 cup maple syrup (or any other vegan sweetener of your choice)

• 1/4 cup melted coconut oil (or any other plant-based oil of your choice)

• 1 tsp vanilla extract

• 1/2 tsp cinnamon

• 1/4 tsp nutmeg

• 1/2 cup raisins or other dried fruit (optional)

Instructions:

1. Preheat your oven to 350°F (180°C) and grease a baking dish.

2. In a large bowl, combine the almond milk, maple syrup, melted coconut oil, vanilla extract, cinnamon, and nutmeg. Whisk together until well combined.

3. Add the cubed bread to the bowl with the liquid mixture, and gently toss until all the bread pieces are coated with the liquid.

4. If desired, stir in raisins or other dried fruit.

5. Let the mixture sit for about 10 minutes, allowing the bread to soak up the liquid.

6. Pour the bread mixture into the greased baking dish, spreading it out evenly.

7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the pudding is set.

8. Remove from the oven and let it cool for a few minutes before serving.

9. Optional: serve warm with a dollop of vegan whipped cream or a drizzle of maple syrup on top for added sweetness.
