Homemade popcorn made with olive oil and pink Himalayan salt can be a healthy, satisfying snack, especially compared to store-bought or microwave varieties.

Why I love it...

1. Whole Grain Snack

Popcorn is a whole grain, high in fibre, which supports digestion, satiety, and heart health.

Home-made stovetop-popped avoids the additives in microwave popcorn.

2. Healthy Fats from Olive Oil

Extra virgin olive oil provides heart-healthy monounsaturated fats and antioxidants like oleocanthal.

3. Pink Himalayan Salt

Contains trace minerals (like potassium, magnesium, calcium) that table salt lacks and is less processed.

4. Lower Sodium (Potentially)

You may use less salt overall because Himalayan salt has a stronger flavour per pinch. Making it at home gives you full control over the amount.

5. No Additives or Preservatives

Homemade means no artificial flavours, trans fats, or preservatives common in prepackaged popcorn and microwave popcorn.

Add herbs like rosemary or paprika for extra flavour without sodium.

Homemade popcorn is a smart, tasty snack 🍿. Just remember to put the lid on once the kernels start popping, or it will end up all over your kitchen 😂 .

It's always nice to get such positive feedback, especially from a client who works shifts. This can be that bit more challenging. It's not only about what and how much you are eating but also about planning your meals and eating them at the correct time to optimise your energy and metabolism. Thank you, Mark Linehan, for this testimonial.

Porridge Bread

Ingredients

·        1 Tub/500ML Natural Yogurt or Soy yogurt

·        2 tsp of Baking Soda

·        ½ tsp Salt

·        1 Egg (or 1Tb sp ground chia/flax/linseed  with 3 TbSp of water soaked for 5 minutes).

·        1 Tb sp Nuts or Seeds of your choice (optional)

·        2 Tubs of Porridge Oats

Method

Mix all of the ingredients together.

Tip into a greased loaf tin.

Bake for 45/55 minutes at 180 degrees Fan oven, or use an airfryer if you have one.

Remove from the oven and check the centre of it is cooked by pricking it with a skewer. The skewer should come out clear without dough stuck to it.

Wrap it up in a dampened tea towel and allow to cool. This prevents the outside crust from getting too hard.

Serving

Use as a substitute to wheaten bread as a sandwich, or to have with soup.

It’s also delicious served with chia seed jam and a dollop of yogurt as a snack or for a light breakfast.
