🏃‍♀️ Power Up with Beetroot Juice! 🥤
Beetroot juice is a performance booster backed by science!

As a competitive athlete and a sports nutritionist .mc here’s why I drink it regularly and recommend that you do too!

💪 1. Boosts Endurance
High in nitrates, beetroot helps improve oxygen efficiency, allowing you to train longer before fatigue sets in.

❤️ 2. Enhances Blood Flow
It widens blood vessels, improving circulation and delivering more oxygen and nutrients to your muscles.

⚡ 3. Increases Energy & Stamina
More oxygen = better energy production, especially during high-intensity workouts.

🧠 4. Aids Recovery
Packed with antioxidants and anti-inflammatory compounds that help muscles recover faster.

🩷 5. Supports Heart Health
Regular intake can help lower blood pressure and improve cardiovascular performance.

🥬 For Best Results
Drink approximately 250ml about 2–3 hours before training or competition.

My favourite beetroot juice is called Feighery's . It's 100% Irish using homegrown pesticide-free beetroot, grown on their home farm in Co. Offaly amd I love supporting local producers.

Delicious High Protein French toast made by my daughter this morning

Ingredients

·       2 slices of wholegrain bread

·       2 small or 1 large egg, ideally local and free range

·       A pinch of pink Himalayan salt

·       A dash of milk

·       A dash of good quality vanilla extract

·       Topppings of your choice such as peanut butter, yogurt, berries, fruit, seeds etc.

Directions

1.       Whisk the eggs, salt, milk, cinnamon and vanilla extract together.

2.       Saturate the bread in the mixture.

3.       Heat a frying pan up and add a spoonful of butter.

4.       Fry the bread until golden brown on both sides.

5.       Serve with toppings of your choice. My daughter loves it with chopped apple, peanut butter and a drizzle of honey. I personally prefer peanut butter, yogurt, berries with a tiny drizzle of chicory root syrup and sprinkled with flaxseeds

Do you also ever eat french toast? If so I would love to know what your favourite topping are, please let me know in the comments below.

29/05/2025

Homemade popcorn made with olive oil and pink Himalayan salt can be a healthy, satisfying snack, especially compared to store-bought or microwave varieties.

Why I love it...

1. Whole Grain Snack

Popcorn is a whole grain, high in fibre, which supports digestion, satiety, and heart health.

Home-made stovetop-popped avoids the additives in microwave popcorn.

2. Healthy Fats from Olive Oil

Extra virgin olive oil provides heart-healthy monounsaturated fats and antioxidants like oleocanthal.

3. Pink Himalayan Salt

Contains trace minerals (like potassium, magnesium, calcium) that table salt lacks and is less processed.

4. Lower Sodium (Potentially)

You may use less salt overall because Himalayan salt has a stronger flavour per pinch. Making it at home gives you full control over the amount.

5. No Additives or Preservatives

Homemade means no artificial flavours, trans fats, or preservatives common in prepackaged popcorn and microwave popcorn.

Add herbs like rosemary or paprika for extra flavour without sodium.

Homemade popcorn is a smart, tasty snack 🍿. Just remember to put the lid on once the kernels start popping, or it will end up all over your kitchen 😂 .

It's always nice to get such positive feedback, especially from a client who works shifts. This can be that bit more challenging. It's not only about what and how much you are eating but also about planning your meals and eating them at the correct time to optimise your energy and metabolism. Thank you, Mark Linehan, for this testimonial.
