MyWellness Soup

Ingredients
2 medium potatoes, diced (for fiber and steady energy)

2 carrots diced (rich in beta-carotene and antioxidants)
1 yellow bell pepper and 1 green bell pepper, chopped (vitamin C and phytonutrients)

2 tomatoes, chopped (lycopene and vitamins for heart and skin health)

1 medium onion, chopped (prebiotic fiber and immune support)

1-inch piece ginger, grated (anti-inflammatory and digestive support)

1 tsp turmeric powder (curcumin for inflammation and overall wellness)

4 cups homemade chicken stock (collagen, protein, and minerals for body strength)

1–2 tbsp dilisk (edible seaweed) (iodine, iron, and fiber for thyroid and gut health)

2–3 cloves garlic (optional, supports immunity)

1–2 tsp olive oil (enhances nutrient absorption)

Black pepper to taste (boosts curcumin absorption)

Fresh herbs like parsley or coriander for flavor and added antioxidants

Instructions
Heat olive oil in a pot. Sauté onion, garlic, and ginger until fragrant.
Stir in turmeric for 30 seconds to release its nutrients.
Add potatoes, carrots, peppers, and tomatoes. Stir gently for 2–3 minutes.
Pour in chicken stock and bring to a boil. Reduce heat and simmer until vegetables are tender (~15–20 min).
Add dilisk and simmer for another 5 minutes.
Season with black pepper and fresh herbs. Serve warm.
