I was excited to do Week 2 of my Weight Loss Programme. In this session we looked at what makes up a healthy plate for weight loss. We also designed a 7 day weekly meal plan & learnt how to plan a weekly food shopping list. In addition we looked at some healthy snacks that don’t require preparation such as
-1 Tbsp of peanut butter with an apple 🍎
-2 Babybell cheese 🧀 with 2 mandarins
-Hummus & chopped Celery, peppers & Carrots 🥕

These protein snacks help to regulate your blood sugars and keep you satisfied between meals 😁

We all recognise the importance of exercise to facilitate weight loss & also manage your weight.

However, exercise doesn’t have to be in a structured environment like a gym or an exercise class. I was delighted to organise a trip to Zero Latency recently, for a virtual reality event.

We all managed to burn a lot of calories and have a lot of fun at the same time. Make sure to integrate exercise into your daily routine either through work, leisure or enjoying fantastic times with your colleagues and friends

Lovely evening last night at the National Concert Hall with one of the most renowned chefs in Middle Eastern food, Yotam Ottolenghi.

He was there with Noor Murad to discuss their latest cookbook “Extra Good Things”.

They talked about how every day ingredients can be transformed into dishes with an Oomph ! They shared ideas for flavour packed sauces, sprinkles and condiments that can add a little something extra to your meals.

I visited two of his restaurants in London last year in Notting Hill and Marylebone. It’s well worth a visit if you are in the UK !

This is a delicious recipe by Jamie Oliver. It’s Harissa Falafels & it is great for weight loss. It contains chickpeas which are a good source of protein & fibre. Therefore they will fill you up & you won’t feel hungry.

INGREDIENTS
-2 x 400g tins of Chickpea’s
-1 and 1/2 tbsp of Harissa paste
-1 headed tbsp of plain flour
-2 lemons 🍋
-30g of fresh mint 🌿
-320g of Red Cabbage
-100g of natural yoghurt
-4 flatbreads
-Olive oil.

METHOD
1.) Drain the 2 cans of chickpeas. Put 1 & a 1/2 cans of the drained chickpeas into a food processor. Add 1 tablespoon of the harissa paste & the flour. Finally grate in the lemon zest & tear in most of the mint. Season with salt & pepper & pulse until just combined. Divide the mixture into 12 portions and shape like a thick cigar.
2.) Coarsely grate the red cabbage with a box grater and put into a bowl. Roughly chop the remaining mint and add it to the bowl. Squeeze in the juice of one lemon 🍋 . Mix everything together.
3.) Mash the remaining chickpeas in a separate bowl with a fork. Add the yoghurt and the juice of half a lemon. Add the remaining 1/2 tablespoon of harissa and mix everything well together.
4.) Toast the flat breads on both sides and leave them in a clean tea towel to remain warm. (They didn’t have flatbreads in the shop, so I used pita breads and did the same as above).
5.) Drizzle 1 tablespoon of olive oil in a pan & fry the falafel’s for 6 to 8 minutes. Turn them regularly so they’re golden and crispy on all sides.
6.) Pile up the warm flatbreads with the minty red cabbage, the falafel and the yogurt dressing. Put a lemon wedge on the sides to serve.

Fabulous day at the Ballymaloe Cookery School recently. I attended a Summer Salads 🥗 demonstration with Rory O’Connell.

It was fantastic also to have a walk around there organic farm and gardens 🪴.

Some of the recipes we did included :
-A rocket, goats cheese & honey 🍯 salad.
-A courgette, lemon 🍋 & parmesan salad.
-A roasted aubergine 🍆 with ricotta, honey, mint, fennel & chilli 🌶 salad

Watermelon 🍉, Feta, Cucumber 🥒 & Mint Salad.

With all this fabulous weather, this is a delicious and refreshing salad 🥗 by Mary Berry. It’s also great for weight loss because it includes protein and fruit and zero carbohydrates. I hope you enjoy it 😋.

INGREDIENTS
-1/2 a cucumber
-1/2 a small watermelon, peeled, deseeded and cut into 2cm cubes
-200g of good-quality feta cheese, crumbled into small pieces
-50 g of pitted black olives in oil, halved
-1 small bunch of mint chopped

FOR THE DRESSING
-4 tablespoons of olive oil
-Juice of half a lemon
-Salt and freshly ground black pepper

INSTRUCTIONS
-Peel the cucumber with a potato peeler, cut in half lengthways and using a teaspoon scoop out & discard the seeds. Cut into crescent shapes.
-Layer half the watermelon, cucumber, feta and olive’s in a bowl. Repeat again and then sprinkle with the chopped mint.
-For the dressing whisk together the oil and lemon juice and seasoned with salt and pepper. Pour the dressing into the bowl.

ROASTED ASPARAGUS & AVOCADO with a SPINACH & ORANGE DRESSING

This is a delicious recipe which is very healthy and it includes lots of green 🥬vegetables. It is by Rukmini Iver. it is also great for weight loss & it’s quick & easy to prepare.

INGREDIENTS
-2 avocados 🥑, halved & stoned
-150 g of asparagus
-1 clove of garlic 🧄 peeled and crushed
-1 orange 🍊, zest only
-1 tablespoon of olive oil
-40 g of almonds or hazelnuts
-100 g of spinach 🥬 chopped
-1 orange segmented

DRESSING
-25 g of tahini
-1 orange, juice only

TO SERVE
-Quinoa, (cook according to instructions provided)

METHOD
1). Preheat the oven to 180°. Put the asparagus and the avocado into a baking tray
2.) Add the orange zest, the garlic and the olive oil, as well as some salt and pepper. Mix well and add the hazelnuts or almonds. Bake in the oven for 15 minutes.
3.)  For the dressing mix the tahini with the orange juice and add a little salt and pepper. Mix well. Add some water if necessary, so the consistency is like a single cream
4). Remove the asparagus and avocado from the oven and add in the spinach and orange segments. Add the quinoa. (When I did this recipe I used bulgar wheat and that was delicious also). Add the tahini dressing on top.

Sometimes it isn’t exercise 👟that’s hard. It just may be hard to find one that you enjoy 😊 . It’s really important to find an exercise that you find fun, in order to develop the internal motivation to maintain the habit.

If you are doing an exercise for external motivation, for example losing weight for an upcoming event such as a wedding. In this case you’re more likely to drop out once the event is over.

Instead if you find an exercise that you like and intrinsically enjoy, you are more likely to keep it up and this will help to maintain your weight loss.

Make a list of the exercises that you actually enjoy. It could be something you are doing at the moment or did in the past. It could possibly be an exercise that you’d like to take up.

Remember exercise doesn’t need to be in a structured environment, like a gym. It could be learning to salsa 💃🏼 dance or doing swimming 🏊‍♂️ lessons.

Look online or go to the noticeboard in your local supermarket. Commit to one new activity such as joining a Zumba or Yoga🧘‍♀️ class or anything that appeals to you. Alternatively you could go online or onto YouTube and find an exercise class, such as a Joe wicks workout 🤸.

Try to commit to a minimum of three times a week to exercise. Obviously any more will be more beneficial.

Alternatively try to increase the amount of activity that you currently do. For example if you do a 40 minute walk 🚶try and increase it to 60 minutes. Alternatively if you work out 3 times a week, maybe increase it to 4 sessions a week.

Remember the things you enjoy you maintain for longer. If you want to lose weight and more importantly keep it off, you need to find an exercise you love ❤️ and enjoy.
