Nathan asks me a very simple question every day ….. “what’s for dinner tonight mum ?” ….. and depending on my answer his reply is either “deadly count me in please” - or “ thanks mum but I’ll sort myself out tonight” and he’ll go off and cook his own thing 😂💪❤️. I kinda knew that the answer to the question today would be the former when I said Crunchy chicken burgers were on the menu 😂…… M&S wholemeal rolls as hex b and 1 syn per flattened chicken piece for the Panko Crumb and two pieces per burger ❤️💪. All replete …… all healthy ❤️

A fabulous evening at home with family celebrating the queen that is my gorgeous mum turning 81 ❤️❤️….. she’s a legend ❤️….. AND still on plan 💪….. one syn each for the homemade croquets and a healthy extra for cheese on the cauliflower but all else free and delicious ……. And it meant I could thoroughly enjoy my glass …. or two of wine ❤️….. we can live the life we want and still lose weight ❤️

These are my gorgeous neighbours Paul & Stevie Deignan. We had the pleasure of their company at dinner tonight and Stevie was telling me all about his training for his Big Swim. This incredible young man is going to swim 60 lengths of the Coral Leisure Wicklow pool to raise money for the Wicklow Hospice in memory of his beautiful mum Rita who sadly gained her wings in May of this year❤️. The swim is on the 14th of September. He blew me away tonight with his incredible progress and is smashing this challenge out of the ball park. It would be hard to find a more inspirational man and he’s doing his mum so proud ❤️❤️. I promised him that I’d share his fundraiser here in case anyone would like to sponsor him …… no pressure but OMG he deserves every single bit of our support ❤️❤️. You can read more of his story in his dads words below ❤️

So we are ready to paint the town red with a very special soon to be 50 year old and his friends ❤️….. well I say paint the town red …… but we’ve a taxi home booked for 11pm 😂😂😂 That’s as red as this 60 year old and 54 year old get 😂😂
