Laal maas is the iconic Rajasthani mutton prep from ages , but when it comes in the form of laal maas bunny chow always seems good.

Ingredients
For Mutton:
400 g mutton (medium curry cuts)
Salt – to taste
Mustard oil or ghee – 2 tbsp
For Masala:
8–10 whole dried Guntur red chillies (soaked)
1 medium onions – fine paste
1 tbsp ginger-garlic paste
½ cup thick curd (beaten)
1 tsp turmeric
2 tsp Kashmiri chilli powder (for colour)
1 tsp coriander powder
Whole spices:
2 bay leaves
4 cloves
1 black cardamom
1 inch cinnamon
6–8 black peppercorns
METHOD
Make Guntur red chilli paste

Grind soaked red chillies into a smooth paste.
Heat mustard oil or ghee till smoking, cool slightly.
Add whole spices → sauté 30 sec.
Add onion paste → cook till oil separates.
Add ginger-garlic paste → sauté.
Add chilli paste + dry spices → cook till thick and glossy.
Add mutton → bhuno roast) for) 8–10 minutes.
Lower heat → add curd slowly, keep stirring.
Add 1–1 ½ cup hot water →
slow cook for 60–75 minutes.
Open lid → cook uncovered till gravy is thick, coating consistency (not watery).
Oil lightly shimmering, gravy clinging to meat.
BREAD PREP

1 square white bread loaves (small sandwich loaf size)
Method:
Cut the top 1–1.5 inch cap.
Remove the inner crumb carefully (keep thick walls).
Lightly brush inside with melted butter.
Toast in the oven at 180°C for 5–6 minutes (just light crisp).
Bread must stay sturdy — not soggy.
Fill hollow bread with thick Lal Maas.
Meat pieces first → spoon gravy just till the rim.
Place 1 small coriander tip on top.
Serve with:
Lightly pickled onion petals
Lemon wedge
Few cucumber ribbons
