Mexican street corn dip ( my summer favorite)

Ingredients:

4 cups corn kernels (fresh or frozen, thawed)
1 tablespoon olive oil
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup cotija cheese, crumbled
1/2 cup shredded cheddar cheese
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and finely chopped
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon smoked paprika
Juice of 1 lime
Salt and pepper to taste
Extra cotija cheese and cilantro for garnish is a must ❣️
Tortilla chips for serving

Directions:

In a large skillet, heat the olive oil over medium-high heat. Add the corn kernels and cook, stirring occasionally, until the corn is slightly charred, about 5-7 minutes. Remove from heat and let cool slightly.
In a large bowl, combine the mayonnaise, sour cream, cotija cheese, shredded cheddar cheese, chopped cilantro, jalapeño, minced garlic, chili powder, smoked paprika, lime juice, salt, and pepper.
Add the charred corn to the mixture and stir until well combined.
Transfer the mixture to a serving bowl and garnish with extra cotija cheese and cilantro.
Serve with tortilla chips and enjoy!

🌟 Garlic Butter Shrimp Scampi Lasagna 🌟

Ingredients:

For the Shrimp Scampi:

1 pound large shrimp, peeled and deveined
4 tablespoons butter
4 cloves garlic, minced
1/2 cup white wine (or chicken broth)
2 tablespoons lemon juice
1/4 cup fresh parsley, chopped
Salt and pepper to taste
For the White Sauce:

4 tablespoons butter
4 tablespoons all-purpose flour
4 cups milk
1 cup grated Parmesan cheese
1/2 teaspoon ground nutmeg
Salt and pepper to taste
For Assembly:

12 lasagna noodles, cooked according to package instructions
2 cups ricotta cheese
1 egg
2 cups shredded mozzarella cheese
Fresh parsley, chopped (for garnish)
Directions:

1️⃣ Preheat your oven to 375°F (190°C).

2️⃣ Prepare the Shrimp Scampi: In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Add the shrimp and cook until they turn pink, about 2-3 minutes per side. Pour in the white wine (or chicken broth) and lemon juice, cooking for an additional 2 minutes. Stir in the chopped parsley and season with salt and pepper to taste. Remove from heat and set aside.

3️⃣ Prepare the White Sauce: In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly browned. Gradually whisk in the milk, stirring constantly to avoid lumps. Bring to a gentle simmer and cook until the sauce thickens, about 5-7 minutes. Stir in the grated Parmesan cheese and ground nutmeg. Season with salt and pepper to taste.

4️⃣ Prepare the Ricotta Mixture: In a bowl, combine the ricotta cheese and egg, mixing until smooth.

5️⃣ Assemble the Lasagna: Spread a thin layer of the white sauce on the bottom of a 9x13-inch baking dish. Place a layer of cooked lasagna noodles over the sauce. Spread 1/3 of the ricotta mixture over the noodles, followed by 1/3 of the shrimp scampi mixture and 1/4 of the white sauce. Repeat the layers twice more, ending with a final layer of noodles and the remaining white sauce on top.

6️⃣ Sprinkle the shredded mozzarella cheese evenly over the top of the lasagna.

7️⃣ Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.

8️⃣ Remove from the oven and let the lasagna cool for 10 minutes before slicing.

9️⃣ Garnish with freshly chopped parsley and serve the Garlic Butter Shrimp Scampi Lasagna hot. Enjoy!

Ingredients:

1 lb Brussels sprouts, halved
4 slices turkey bacon, chopped
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 tablespoon olive oil
Salt and pepper to taste

Instructions:

Cook the Bacon:

In a large skillet, heat olive oil over medium heat.
Add the chopped turkey bacon and cook until crispy, about 5-7 minutes.
Remove the turkey bacon from the skillet and set aside, leaving the drippings in the pan.

Sauté the Brussels Sprouts:

Add the halved Brussels sprouts to the skillet.
Cook for 6-8 minutes, stirring occasionally, until the sprouts are golden brown and tender.
Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Make the Creamy Sauce:

Pour the heavy cream into the skillet with the Brussels sprouts and garlic.
Bring to a simmer and cook for 2-3 minutes until the cream thickens slightly.
Stir in the grated Parmesan cheese and shredded mozzarella cheese until melted and well combined.

• 1/2 teaspoon Baking Powder
• 1/4 cup Unsalted Butter, softened
• 4 oz Cream Cheese, softened
• 1 Large Egg
• 1 tablespoon Milk
• 1/2 teaspoon Vanilla Extract
• 1 1/4 cups Powdered Sugar
• 5-6 tablespoons Mini Chocolate Chips

• Directions:
1. Prepare the Dry Mix: In a medium bowl, mix together the flour, cornstarch, and baking powder. Set aside.
2. Cream Butter and Cheese: In a big bowl, use an electric mixer to blend the butter and cream cheese until smooth.
3. Add Wet Ingredients: Mix in the egg, milk, and vanilla extract until well combined.

Pepperoni or other pizza toppings
2 Cups Shredded Mozarella Cheese
How To Make Garlic Bread Pizza
Preheat oven to 375*.
Place the garlic bread on a cookie sheet that has been sprayed with non stick cooking spray.
Next add a little bit of pizza sauce to each slice of bread enough to cover the one side of the bread, then top it with pepperoni or your desired pizza toppings. Lastly, cover with cheese.
Continue this process until all the slices of bread are done.
Bake in the oven for 5-6 minutes or until cheese is melted.

Chocolate Roll Cake (Banh Cuon Chocolate)

Ingredients :

🍳 5 large eggs (room temperature)
🍬 3/4 cup sugar (divided)
🌾 1/4 cup vegetable oil
🥛 1/4 cup milk (whole, low-fat, or alternative)
🍦 1 tsp vanilla extract
🍰 3/4 cup cake flour
🍫 1/4 cup cocoa powder
🥄 1 tsp baking powder
🥄 1/2 tsp baking soda
🧂 1/4 tsp salt
🍋 1/4 tsp cream of tartar
🍚 2 Tbsp powdered sugar (for dusting)
💧 1/4 cup water
🥄 2 tsp unflavored gelatin
🥛 2 cups heavy whipping cream (cold)
🍚 1 cup powdered sugar

How to Prepare

Preheat & Line Pan:

Preheat oven to 350°F (177°C).
Line a 12x18 inch sheet pan with parchment paper.

Prepare the Cake Batter:

Separate egg yolks and whites.
Beat egg yolks with 1/2 cup sugar until pale yellow and thick.
Add vegetable oil, milk, and vanilla extract; mix well.

Sift cake flour, cocoa powder, baking powder, baking soda, and salt; add in thirds to the egg yolk mixture.

Beat egg whites with cream of tartar until foamy, then gradually add 1/4 cup sugar; beat to stiff peaks.

Fold egg whites into the batter in thirds.

Bake the Cake:

Spread batter evenly in the prepared pan.
Bake for 10-12 minutes. Check doneness with a light touch or a toothpick.

Cool for 5 minutes, then transfer to a powdered sugar-dusted kitchen towel and roll up to cool completely.

Prepare the Cream Filling:

Chill mixing bowl and whisk.
Dissolve gelatin in water, then cool to 85°F (29°C).

Beat heavy cream until thick, add powdered sugar, and continue beating.
Add cooled gelatin and mix until stiff peaks form.

Assemble the Cake:

Unroll the cooled cake, spread with cream filling, and re-roll.
Chill in the refrigerator until ready to serve.
Serve:

Dust with powdered sugar or cocoa powder.
Cut into slices and serve with fresh berries.
Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to 2 months.

Homemade Cheese Sauce

Ingredients:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
1/4 teaspoon garlic powder (optional)
Salt and black pepper to taste

Directions:
In a saucepan, melt the unsalted butter over medium heat.
Add the all-purpose flour to the melted butter and whisk continuously for about 1-2 minutes to create a roux (a thickening agent).
Gradually pour in the whole milk while whisking constantly to prevent lumps from forming.
Cook the mixture, stirring continuously, until it starts to thicken, about 3-5 minutes.
Reduce the heat to low and add the shredded cheese to the sauce, a little at a time, stirring until the cheese melts and the sauce becomes smooth and creamy.
If using, add the garlic powder for extra flavor. Season with salt and black pepper to taste.

No-Bake Strawberry Crunch Cheesecake🍓

- 1 lb Vanilla Cream Cookies (about 34 cookies, with some reserved for topping)

For the Filling:

- 1 small box (3.3 oz) Strawberry Jello
- 1 cup Boiling Water
- 16 oz Cream Cheese, softened (2 bricks of 8 oz each)
- 3/4 cup Granulated Sugar
- 2 cups Heavy Whipping Cream
- 1/2 cup Powdered Sugar
- 10 Strawberry Wafer Cookies (about 4 oz, for extra crunch)

For the Topping:

- Whipped Topping, about half a small tub, thawed and placed into a pastry bag with a star tip (Wilton 1M tip recommended)

Directions:

The Crust:

1. Process 26 vanilla cream cookies into fine crumbs and mix well with melted butter.
2. Press this mixture into the bottom of a greased 10" springform pan and set in the freezer for 15 minutes.

The Filling:

1. Dissolve the strawberry jello in boiling water and let it cool (do not refrigerate).
2. Beat the cream cheese and granulated sugar until smooth.
3. Whip the heavy cream with powdered sugar to stiff peaks, then fold it into the cream cheese mixture and cooled strawberry jello in two steps.
4. Layer half of the whipped cream mixture over the crust, followed by half of the strawberry jello mixture. Freeze for 15 minutes, then add the remaining cream cheese mixture and top with the remaining strawberry mixture.

The Topping:

1. Crush the remaining vanilla cream cookies and strawberry wafers. Add food coloring for a pinker hue if desired.
2. Sprinkle this crunchy mixture over the cheesecake and refrigerate for 4 hours to set.
3. Garnish with swirls of whipped topping before serving.

Ingredients
A yellow cake mix box.
2 large beaten eggs.
1/2 Cup.Of softened butter.
4 Cups.Of confectioner’s sugar.
An 8-oz box.Of softened cream cheese.
1 small spoon.Of vanilla extract.
How To Make Cream Cheese Squares
-Turn the temperature in the oven up to 350 degrees F.
-Mix the cake mix, eggs, and butter together until everything is evenly distributed.
-Make a cake layer by pressing the cake batter onto a 9×13-inch pan that has been buttered.
-Combine the confectioner’s sugar, cream cheese, and vanilla extract in a mixing bowl and stir until the mixture is creamy and smooth.
-On top of the cake mixture, spread the cream cheese and frosting mixture.
-Put in oven and bake for 35 minutes. The next step is to cool fully before cutting into squares.
