Ragi Veggies Wrap
For the Ragi Roti (Wrap)

Ingredients
Ragi flour (finger millet flour) – 1 cup
Hot water – as needed
Oil – ½ tsp (optional)

Method:

1. In a bowl, add ragi flour.
2. Gradually add hot water and knead to a soft, pliable dough.
3. Rest for 5 minutes, covered with a damp cloth.
4. Make small balls and roll them out gently using a rolling pin.
5. Cook on a hot tawa until both sides are done. Apply a little oil if desired.

For the Veggie Filling

Ingredients:

Onion – 1 (thinly sliced)
Bell peppers (red/green/yellow) – ½ cup (sliced)
Carrot – ½ (grated or julienned)
Cabbage – ½ cup (shredded)
Garlic – 2 cloves (minced)
Cumin seeds – ½ tsp
Turmeric – ¼ tsp
Black pepper – to taste
Salt – to taste
Olive oil – 1 tsp
Lemon juice – 1 tsp
Fresh coriander – for garnish

Method:

1. Heat oil in a pan. Add cumin seeds and let them crackle.
2. Add garlic and sauté until fragrant.
3. Add onions, stir for 1-2 mins, then add other vegetables and cook on medium heat for 3–4 minutes (retain some crunch).
4. Add turmeric, salt, and pepper. Mix well.
5. Finish with lemon juice and chopped coriander.

Assembling the Wrap

1. Place the ragi roti on a flat surface.
2. Add 2–3 tablespoons of the veggie filling in the center.
3. Optional: Add hung curd dip or mint chutney.
4. Roll it tightly into a wrap.
5. Serve warm. Wrap in foil if packing for later.
