Today on International Day of Persons with disabilities, we want to celebrate all those who carry on forward, in spite of their disabilities. We want to take this moment to give a special shout-out to Mr. M.N. Dipak Nambiar. When an accident ended up leaving him disabled, Mr. Nambiar did not lose his spirit. Even though he was also weighed down at that same time by relationship issues and was also faced with the responsibility of deciding the course of not just his but also his childrens' life, Mr. Nambiar never gave up hope. He took up squash as a choice of the sport after his amputation, apart from cricket, guitar lessons, and being a supportive figure in the life of others. In need of a healthy go-to snack that both kids and adults will enjoy? Check out these tasty Fruit and Nut Bars. Mix and match the dried fruit with what you have in your pantry. These store great in the fridge or the freezer. This recipe is from Steven, our Global Volunteer Director
INGREDIENTS
1 ½ cups of raw almonds
1 cup dates, pitted
1 cup of freeze dried blueberries or other unsweetened dried fruit (such as dried cherries)
1/2 cup of prunes
METHOD:
1. In a food processor, process the almonds until fine like flour. Adjust the almond flour so it does not stuck under the blade, make it loose.
2. Process the almond flour and the rest of the ingredients until mixed together well. It may be helpful to do this in small batches.
3. Line a pan with parchment paper or use a glass baking dish, and add the mixture to the pan. Spread-out the mixture using the back of a spoon or clean hands, try to make it as even as possible. Place into the fridge to allow it to set. Once ready, slice the bars into desired sizes (10 large bars or about 30 bit-seized bars). Store remaining bars in the refrigerator or freezer.

These oatmeal cookie dough bites are a perfect bite sized treat for your sweet tooth! Simple to make and only require a few ingredients. Recipe from Kristina (@kristinademuth), our Director of Nutrition and Social Media Strategy
INGREDIENTS
1 cup rolled oats
1/2 cup raw cashews or hemp seeds
1 teaspoon cinnamon
1/2 cup (packed full) pitted dates
1 teaspoon vanilla extract
1-5 teaspoons of water, as needed
1/4 cup raisins
METHOD:
1. In a food processor, add the oats, cashews (or hemp seeds), and cinnamon. Process until oats and cashews are a coarse flour.
2. Add the dates to the food processor. Process the ingredients together.
3. Add the vanilla and pulse together. If the dough is not sticking together, add 1-5 teaspoons of water (start with 1 and add more as needed). Continue to process until the dough starts to form a ball or at least sticks together when pinched.
4. Spread the dough out and sprinkle the raisins on top. Fold the dough together until the raisins are well incorporated into the mixture.
5. Roll the dough into 12-15 small balls. Place the bites into a large glass container. Enjoy as is, or transfer to the fridge or the freezer to allow it to set.
Variations: Omit the raisins for a cinnamon oatmeal bite. Swap the dates with raisins. Use hemp seeds in place of cashews.
