Ghee- the superfood.
The Charaka Samhita, one of the classical texts of Ayurveda, says that” the intake of ghee is prescribed for those whose bodily constitution is dominated by *VATA* and *PITTA*, those desirous of good eye sight, the old, the children, the weak, those desirous of longevity, of strength, good complexion, memory, intelligence, power of digestion, proper functioning of sense organs and those afflicted with injuries due to burns.”

Ghee is the unctuous substance par-excellence.

It has a remarkable property to assimilate the properties of other substances when added to it without giving up its own properties.
Ghee alleviates the vata due to its unctuous quality and pitta due to its coolness and sweetness.

It boosts *ojas*i.e. the body’s essential source of vigor and longevity.

It lubricates connective tissue and wards off stiffness.

It helps to improve fat metabolism, because of its saturated short chain fatty acid structure. It calms the liver and improves the immune system.

Now a days we are skeptical and reluctant to consume ghee but as per our ancient science ,One should consume 2 tsp ghee per day in any form ,by spreading on bread, by adding to pulses, in cooking veggies .
