Light and healthy Turkey Taco Lettuce Wraps that are an easy low carb alternative to traditional tacos, are super flavorful and take less than 20 minutes to make!

Ingredients for 6 serving :
- 1 1/4 lb 99% fat-free lean ground turkey
- 1 1/2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried oregano
- 1/4 tsp salt
- 1 (15 oz) can diced tomatoes, drained
- 1 (4.5 oz) can chopped green chiles
- 1 cup fresh or frozen corn
- 1 (15 oz) can black beans, drained and rinsed
- 1/2 cup (or more) chunky salsa
- 2 Tbsp chopped cilantro
Juice of half a lime
- 12 butter lettuce leaves
Toppings (optional): shredded cheese, avocado, sour cream

Instructions :

1. In a large skillet over medium heat, cook ground turkey until it begins to crumble and brown.

2. Add chili powder, cumin and oregano and continue cooking until turkey is browned and completely cooked.

3. Stir in tomatoes, green chiles, corn, black beans, salsa and cilantro. Cook about 5 more minutes until heated through then mix in lime juice.

4. Add about 1/4 cup turkey mixture to each lettuce cup, add desired toppings and enjoy!

The preparation :

Brownie Layer:
6 tablespoons unsalted butter
2 teaspoons vanilla extract
3 large eggs
1 ½ cups almond flour
½ tablespoon instant coffee
½ cup Hershey’s Baking Cocoa
½ teaspoon salt
1 cup erythritol
1 teaspoon baking powder

Cream Cheese Layer:
1 pound cream cheese, softened
½ cup erythritol
1 teaspoon vanilla extract
1 large egg

The ex*****on:

1. preheat oven to 350°F, and spray or grease a 8×8-inch baking pan.

2. In a large mixing bowl, mix the wet ingredients of melted unsalted butter and 2 teaspoons of vanilla extract until well combined. Then mix in the 3 large eggs.

3. In a small bowl: mix the dry ingredients of almond flour, instant coffee, baking cocoa, salt, erythritol, and baking powder. Then, whisk the wet ingredients with the dry ingredients. Place ¼ cup of batter aside to use later.

4. Add the larger portion of batter into the 8×8-inch baking pan. The batter will be thicker than traditional brownie batter.

5. In a mixing bowl: blend the room temperature cream cheese, 1 large egg, 1 teaspoon vanilla extract, and ½ cup erythritol until smooth. Spread on top of the brownie layer.

6. Using the ¼ cup of brownie batter, mix into the top layer of cream cheese to create a top brownie crust. This layer should be fragile.

7. Place in the oven to bake for 30-35 minutes at 350°F. When finished, you want the cheesecake bars to be thoroughly cooled when cutting the slices.

This makes a total of 16 servings of Mocha Cheesecake Bars. Each bar comes out to be 232 Calories, 21.15g Fats, 3.24g Net Carbs, and 6.12g Protein.

- Preheat the wok (before you put the oil in).

- Season the oil (by briefly cooking whole pieces of garlic and ginger root, which you remove when you add the food to be cooked).

- Symmetry of cut (all pieces must be cut the same size and shape).

- Have all ingredients cut and sauces mixed before you cook.

- Use very high heat and cook fast.

How to Make Low-Carb Ginger Chicken Stir Fry:

1. Trim chicken breasts and cut into strips.

2. Cut ends off red pepper, remove seeds, and cut the pepper into strips. Trim ends from sugar-snap peas and cut each one in half lengthwise.

3. Peel garlic cloves, and cut a few slices of fresh ginger root.

4. Slice green onions on the diagonal.

5. Mix soy sauce or Gluten-Free Soy Sauce, Oyster Sauce or Gluten-Free Oyster Sauce, sesame oil, Monkfruit Sweetener  or sweetener of your choice, rice vinegar, and Minced Ginger from a jar (affiliate link) to make the stir-fry sauce.

6. Put wok or frying pan over high heat and heat the dry pan for about 1 minute.

7. Add 2 T peanut oil and heat the oil 1 minute. Then add slices of ginger and garlic cloves and cook 1-2 minutes, just until you start to smell garlic and ginger.

8. Discard garlic and ginger slices.

9. Add chicken and cook for about 4 minutes, stirring constantly, until chicken is nearly cooked through and barely starting to brown.

10. Add red pepper strips and sugar snap peas and cook 2-3 minutes, cooking constantly.

11. Add green onion and cook about 1 minute more, still stirring.

12. Add sauce and cook 2-3 minutes, stirring as it cooks, until the sauce is slightly thickened and coats the ingredients.

13. Serve hot.

 What is a no-carb diet?

A no-carb diet is a way of eating that eliminates digestible carbs as much as possible.
Carbs are your body’s primary source of energy. They’re found in grains, beans, legumes, fruits, vegetables, milk, yogurt, pasta, bread, and baked goods.

 Foods to eat :

Foods that are typically allowed on a no-carb diet include:

- Meat and low-carb animal products: chicken, beef, turkey, lamb, venison, bison, pork, eggs, butter, lard, cheese

A classic Russian dish made with chicken and Keto friendly.

Ingredients:
1. 450 grams Boneless Chicken Thighs
2. 200 grams of Mushrooms
3. 100 grams Green Bell Peppers
4. 50 grams Onion
5. 10 grams garlic

Instructions :

- Marinate the chicken with olive oil, salt, white pepper, black pepper, paprika, and nutmeg.

- Heat the goose fat in a frying pan and then sear the chicken off in 2 batches. You want to cook it on high heat so that the chicken gets some nice caramelization. 

- Once that's done, add the onions, garlic, and mushrooms to the frying pan and sautee. Add some of the chicken stock if needed to deglaze the pan. 

- Cook till the liquid dries out and the vegetables start getting some color on them. Add in the bell peppers and continue cooking. 

- Once the peppers have softened, then add in the resting juices from the chicken and the rest of the chicken stock. 

- Add in the chicken as well and cook till the meat is fully cooked through. 

- Turn off the heat and add in the sour cream and finish with the chopped chives.

- If the sauce is too 'liquid,' you can reduce it on low heat till it thickens or adds some xanthan gum to thicken it. 

- Serve with cauliflower rice.

1 cup Heavy Whipping Cream

½ Cup Distilled Water

1/3 Cup Pumpkin Puree

1 Tsp Pure Vanilla Extract

20-30 Drops Liquid Stevia or 1/2 c Bocha Sweet

Spice Flavoring Options

1 Tbsp Pumpkin Pie Spice

Instructions :

You can make this keto pumpkin spice coffee creamer with Young Living Vitality Essential Oils (think of them as concentrated flavoring extracts) OR with Pumpkin Pie Spice.

Next, choose if you'll use a liquid sweetener like Stevia or a granulated sugar substitute like Bocha Sweet. If you are going to use a granulated sugar substitute, heat your water and dissolve the sugar substitute in it.

Combine heavy cream and flavoring (either oils or spice) and stir until combined. Stir in the pumpkin puree, vanilla and stir until completely combined. Drizzle in the water and stir or blend until combined.

For the stuffing:
- 1 cup raw cauliflower puree
- 1/4 cup slivered almonds, ground
- 2 eggs
- 1/3 cup coconut flour
- 1 tsp granulated sugar substitute
- 1/8 tsp salt
- 1/4 tsp garlic powder
- 1 Tbsp ground cumin
- 1/4 cup parmesan cheese
- 1 Tbsp melted butter
- 8 oz raw Mexican chorizo sausage
- 1 cup shredded cheddar cheese
- 1/4 cup cilantro, chopped
- 6 bone-in, skin-on chicken breasts

Instructions:

1. In a medium bowl, combine your raw pureed cauliflower with the almond flour or ground almonds, coconut flour, eggs, spices, parmesan cheese, and butter. Stir, and you should have a thick mashed potato-like puree. Set aside.
2. Remove the chorizo from the casings and saute in a medium pan until fully cooked. Mix in the puree until well combined.
3. Remove from the heat and add the shredded cheese and cilantro.

4. Season your chicken breasts with salt and pepper. Loosen the skin away from the chicken breasts, being careful to leave it attached.
5. Divide the stuffing into six equal portions and stuff under the skin of each chicken breast. Pack as much as you can into them!
6. Once your chicken breasts are stuffed, drizzle the tops with a little oil or butter and place on a parchment or foil-covered baking sheet. Bake for one hour at 350 degrees or until a meat thermometer stuck in the thickest part reads 165 degrees.
7. Let them rest for a few minutes before serving. Garnish with half a lime (to be squeezed over the chicken) and chopped cilantro.

Ingredients

- 1 chicken leg (about 5 oz each)
- ¼ tsp garlic powder
- ½ tbsp olive oil
- ¼ tbsp Italian seasoning
- 1⁄8 tsp salt
- 1¾ oz. unsalted butter softened
- ½ garlic clove, pressed
- ¼ tbsp fresh parsley, finely chopped (optional)
- salt and ground black pepper, to taste
- 1⁄3 lb broccoli
- salt

Instructions

1.Preheat oven to 400 °F (200 °C).
2. Toss chicken legs with olive oil and seasoning.
3. Put the chicken legs, skin side up, in a baking dish. Bake 40-45 minutes or until juices run clear and chicken reaches 165 °F (74 °C).
4. While the chicken is in the oven, cut the broccoli into florets and slice the stem (or use frozen). Boil in lightly salted water for 5 minutes in a saucepan. Drain the water and put on the lid to keep warm.

5. Mix all the ingredients to the garlic butter in a bowl. Set aside.

6. Serve the chicken with broccoli and garlic butter.

Keto Chocolate Chips Ingredients:
- ¼ cup butter, melted (approx. 60g)
- 4 tbsp white erythritol (approx. 52g)
- 2 tbsp pure brown erythritol (approx. 26g) or 1.5 tbsp (20g) Golden Monk Fruit Sweetener or 1:1 brown erythritol blend)
- ¾ cup finely ground almond flour (approx. 100g)
- 1  egg
- ½ cup sugar-free chocolate chips (approx. 70g)
- ½ tsp sugar-free vanilla extract

Instructions:

1. Preheat your oven to 350°F/180°C.
 
2. The first step is to melt your butter.
 You can either put it in your microwave for 20-30 seconds or heat it in a small pot until it melts.
 Be sure that the butter doesn't boil, though!
 
3. Add the erythritol and vanilla extract to the melted butter and whisk with an eggbeater until well combined.
 
4. Add the egg and whisk for a few seconds until the egg and the remaining ingredients are well combined.
Don't add the egg to the butter if it's still hot!
 If you've added the erythritol before, you should have incorporated enough air so that the butter won't be hot anymore but make sure to test it still.
☝︎Don't whisk the egg for too long because this may cause the egg to denature, and that won't be a delicious addition to our recipe.
 
5. Add the dry ingredients (almond flour, salt & xanthan gum) and knead with your hands until you get a smooth and chunk-free dough.
 
6. Incorporate the sugar-free chocolate chips into the dough.
 
7. Separate the dough into approx. 8 equal-sized balls. (Maybe more or less depending on how big you want your cookies to be.)
 Place the balls onto a baking tray lined with parchment paper and press them down using the palm of your hand.
 
8. Bake the cookies for approx. 8-9 min in your preheated oven.
☝︎ Keep an eye on your cookies!
 In my experience, almond flour tends to burn faster than wheat flour.
We also don't want to overbake our cookies because the chewy and soft consistency is what makes these keto chocolate chip cookies so unique and delicious!
 
9. Let the cookies cool down completely before enjoying them.

• ¾ cup shredded Asiago cheese⁠
• ¼ cup water⁠
• 1 teaspoon oregano⁠
• 1 teaspoon minced garlic⁠
• Salt and pepper to taste⁠

Procedure:⁠

1. Place your tomato paste, minced onion, and garlic into a pot. Turn on the heat to medium and pour in your cream.⁠
2. Bring to a boil while you whisk the mixture together. ⁠
3. Once it’s boiling, add in your Asiago cheese little by little. It should start thickening up.⁠
4. Add in the water and cook for an additional 4-5 minutes.⁠
5. Serve and top with pepper. You can optimally add some green onions too.⁠
