* Make the seasoning: In a bowl, combine the carrot, green onion, ginger, garlic, gochugaru, fish sauce, rice flour, and water. Mix well.
* Combine ingredients: Place the cabbage in a jar or container. Pour the seasoning over the cabbage and massage it in until the cabbage is evenly coated.
* Ferment: Seal the jar and let it ferment at room temperature for 2-3 days, or longer for a stronger flavor. Taste and adjust the seasoning as needed.
Tips:
* For a milder flavor, reduce the amount of gochugaru.
* Experiment with different vegetables and seasonings to create your own unique kimchi.
* Store kimchi in the refrigerator after fermentation. It can be stored for several months.
