Atta Suji (Whole Wheat Flour & Semolina) and Nariyal (Coconut) Burda Biscuits:
Ingredients:
Whole Wheat Flour (Atta) – 1 cup
Semolina (Suji) – 1/2 cup
Grated Fresh Coconut (Nariyal) – 1/2 cup
Sugar – 1/4 cup (adjust to taste)
Ghee (Clarified Butter) – 1/4 cup
Cardamom Powder – 1/2 tsp
Milk – 2-3 tbsp (as needed for dough)
Chopped Nuts (optional) – 2 tbsp (like cashews or almonds)
Salt – A pinch (optional)
Instructions:
1. Prepare the Ingredients:
Grate the coconut if using fresh coconut.
Sift together the whole wheat flour (atta), semolina (suji), and baking powder in a bowl.
2. Mix Wet Ingredients:
In a separate bowl, melt the ghee and add sugar. Stir until the sugar dissolves.
Add grated coconut, cardamom powder, and any optional chopped nuts to the ghee-sugar mixture.
3. Combine the Dry and Wet Ingredients:
Gradually add the ghee-coconut mixture to the flour and semolina mixture.
Mix well and knead to form a smooth dough. Add milk slowly if needed to bring the dough together. It should not be too soft or sticky.
4. Shape the Biscuits:
Preheat the oven to 180°C (350°F).
Roll the dough into small balls and flatten them gently with your palm.
Place the biscuits on a baking tray lined with parchment paper, leaving some space between them.
5. Bake the Biscuits:
Bake the biscuits in the preheated oven for 15-20 minutes or until they are golden brown around the edges.
Keep an eye on them, as baking time can vary depending on your oven.
6. Cool and Serve:
Once done, remove from the oven and let them cool on a wire rack.
