Chicken dum biryani recipe
Ingredients
Half kg chicken
Rice- basmati
Curd
Whole spices
Salt
Black pepper
Kashmiri red chili powder
Ghee
Mustard oil
Jeera
Green chillies
Ginger garlic paste
3 big sized onions
Tomatoes
Coriander leaves
Saffron soaked in milk
This recipe involves 3 steps
1st step- marination
Thoroughly wash the chicken and marinate it with curd, whole spices, red chilli powder, salt, black pepper and ginger garlic paste. Keep this marinate to refrigerate for about 4-5 hours.
2nd step
Rice/ chicken cooking
First soak rice for about half an hour. Pour the rice into the boiled water with jeera and some salt. Cook rice for about 80% and drain the water. Let it cool.
Put oil in the vessel and add whole spices. Put long sliced onions. Deep fry and take it aside. Then in the same oil put some oinion paste, ginger garlic paste and cook. Put tomatoes and let the masala fry. Add salt. Then put chicken and let it slow cook for about 15-20 min till the chicken is cooked.
3rd step
Layering
Take a big vessel. Put ghee and add one layer of rice and then layer chicken. Put fried onions, some green chillies and thinely sliced coriander. Then add another layer of rice and repeat the whole process. The last layer should be rice layer. Add saffron milk and some ghee at the end. Cover it with aluminum foil and place lid. Put some weight if you can. Place a hot taawa in the gas and place the vessel upon it. Slow cook it for about half an hour. Let it sit for while. Serve it with raita and salan.
