😍Dry Fruits Laddu is an easy, nutritious recipe of energy balls that are healthy and tasty. This dry fruit laddu recipe is made without any added sugar or jaggery, ghee or oil, is naturally vegan and comes together under 20 minutes. Packed with nutrients, good fats and fibre, these energy balls are made with dates, figs and various nuts.
😋Dry fruits laddu recipe - no sugar, no jaggery, gluten free ... There is no exact recipe to make dry fruits laddu or these energy balls. The proportions of the nuts and dry fruits can vary according to your choice. Just make sure the dates and figs are a little extra. Since the dates, figs, apricots, raisins have cohesive and sticky properties that help in binding the laddu.
🤩I have used dates, figs, apricot, almonds, cashews, raisins, pistachio, some seeds, desiccated coconut to make these laddu. Skip the desiccated coconut if you don’t like the coconut aroma.
Recipe-
🔸in a blender take 1 cup of seedless dates & apricots and dry blend around 4-5 pulses. blend dates coarsely. keep aside.
🔸now finely chop cashews, pistachios and almonds. do not powder them as you wont enjoy the crunchy bites.now take a kadai and add a tbsp of ghee.
🔸add all the dry fruits like raisins, cashews, pistachios and almonds. fry them on medium flame for 3-4 minutes till they change colour lightly.
🔸Now add coarsely blend dates & apricots. continue to fry on medium flame smashing dates with a spatula. this helps dates to separate out and mix uniformly with other dry fruits.
🔸Also add cardamom powder and continue to saute. saute till the dates start releasing oil. turn off the flame and allow to cool for a minute or 2.
🔸Then immediately start making laddoo.. do not cool completely, then you wont be able to make laddoo, serve immediately or store ladoo in airtight container.
