Aloo Sogri

Ingredients
• 1 cup sogri, chopped
• 1 cup boiled potatoes, chopped
• ½ cup curd mixed with 1 tsp besan
• 1 tsp jeera
• 1 tsp red chilli powder
• 1 tsp dhaniya powder
• Ghee
• Salt

Method
1. Heat oil and add jeera.
2. Add sogri, red chilli and dhaniya powder; cook until tender.
3. Add boiled potatoes and mix well.
4. Add the curd–besan mixture and cook until the oil separates.
5. Garnish with dhaniya.

Uri Furi Sogri

Ingredients
• 1 cup sogri, chopped
• 2 tomatoes, chopped
• Ghee
• 1 tsp jeera
• ½ tsp heeng
• 1 tbsp red chilli powder
• 1 tsp amchoor
• 1 tsp dhaniya powder
• Salt
• Pinch of sugar

Method
1. Heat ghee and add heeng and jeera.
2. Add tomatoes, red chilli and salt; cook until soft.
3. Add sogri and cook until done.
4. Finish with amchoor and dhaniya; add a pinch of sugar for balance.

Sev Tamatar (Rajasthani)

Ingredients
• 2 tomatoes, chopped
• 1 onion, chopped
• 1 tbsp garlic, chopped
• 1 tsp green chillies, chopped
• 1 tsp cumin
• ½ tsp mustard seeds
• ½ tsp turmeric
• 1 tsp red chilli powder
• Salt
• 1 tsp sugar
• 1 tbsp malai
• Gathiya/Sev
• Oil

Method
1. Heat oil and add cumin and mustard seeds.
2. Add onions, garlic and green chillies; sauté.
3. Add tomatoes, turmeric, red chilli and salt.
4. Cook until the tomatoes soften; add a little water and malai.
5. Add sugar for balance.
6. Turn off the flame and mix in sev just before serving.

Chana Dal Pyaz

Ingredients
• 1 cup boiled chana dal
• 2 cups onions, cubed

For the paste:
• 3 tomatoes
• 2 tbsp garlic
• 2 green chillies
• 1 tbsp red chilli powder
• 1 tsp dhaniya powder
• 1 cup curd, blended
• Oil

Method
1. Heat oil and shallow-fry the cubed onions. Keep aside.
2. Heat oil again and sauté the prepared tomato–garlic–chilli paste.
3. Add the blended curd and cook until the oil separates.
4. Add the fried onions and boiled chana dal.
5. Simmer for a few minutes and serve hot.

✨ Saras Rajsakhi National Fair 2025 ✨

The Saras Rajsakhi National Fair 2025 was formally inaugurated at Shilp Gram, Jawahar Kala Kendra, Jaipur, celebrating India’s rich heritage of art, craft, culture, and women-led entrepreneurship.

The fair was graciously inaugurated by the Hon’ble Chief Minister of Rajasthan, Shri Bhajanlal Sharma ji, in the august presence of Shri V. Srinivas, IAS, Chief Secretary, Government of Rajasthan; Smt. Sreya Guha, IAS, Additional Chief Secretary, Rural Development Department, GoR; Smt. Punam, IAS, Divisional Commissioner,Jaipur; Smt. Neha Giri, IAS, State Mission Director, RGAVP; and Shri Dr. Jitendra Kumar Soni, IAS, District Collector, Jaipur, along with senior officials and dignitaries from RAJEEVIKA.

Being held from 18th December to 4th January, the fair provides a national platform to Self-Help Group women from across the country, promoting sustainable livelihoods, inclusive growth, and women empowerment through traditional and contemporary crafts.

Palak Lehsuniya

Ingredients
• 2 cups spinach purée
• 10–12 garlic cloves, sliced
• 1 green chilli
• Salt
• 1 tsp red chilli powder
• Ghee

Method
1. Heat ghee and fry the sliced garlic until golden.
2. Add green chilli.
3. Add spinach purée, salt and red chilli powder.
4. Cook on medium-high until the moisture evaporates.
5. Finish with a drizzle of ghee.

Palak Chole

Ingredients
• 1 cup boiled chole
• 1½ cups spinach purée
• 1 onion, chopped
• 1 tsp grated ginger
• 1 tsp chopped garlic
• 1 tsp chopped green chillies
• ½ tsp chana masala
• Salt, red chilli
• Oil

Method
1. Heat oil and add cumin. Then add onions, ginger, green chillies and garlic.
2. Add the spices and cook until soft.
3. Add spinach purée and cook for 4–5 minutes.
4. Add chole along with ½ cup water.
5. Simmer for 10 minutes.
