Our in-season Mango Cheesecake…in a jar!

We love our seasonal fruit cheesecakes and this is one we wait for all year; not only for the season itself, but for a specific variety of this King of Fruits to become available!

The cake-in-a-jar is designed for our patrons in who have been asking to make more of our bakes available locally. So we decided on crafting the cakes within our dessert jars so it could travel more safely, while also looking great!

Freshly baked and delivered to the S’yuoCha Tea House at MG Market the same day, the cheesecake is almost identical to what we serve at our private dining or the whole cake orders that we deliver within . The small tweaks include a fresh coulis topping (not the traditional fruit slices) and a more dense base.

Our cakes and desserts last up to 3-4 days when stored in the refrigerator. We are sending a limited number of jars at a time, so grab them from the shop when they are at their freshest.

Green Tea Panna Cotta with Fruit Coulis.

A refreshing sensation of tangy juiciness followed by a creamy, milky sweetness with delicate notes of green tea, vanilla, and toasted sugarcane.

A traditional Italian dessert that translates to cooked cream, but with our own little twists!

This dessert is eggless. It’s light and pairs really well with a first flush tea!

We have had to deny so many queries and requests for delivering to you due to the lack of reliable door-to-door logistics services in our region.

But we have now found a kindred spirit, with a one-of-a-kind space in Gangtok, from where you can enjoy our fresh desserts and cookies.

The newly opened at New Market is a refreshing and tastefully designed space finally promoting the one product our region is most known for - Tea!

Available with them are:
Tiramisu
Chocolate Soufflé
Lemon Almond Soufflé
Assorted cookie boxes which have green tea, peanut butter, sour cream, coconut, chocolate chip, coffee nut and coffee checkerboard.

These are available to takeaway or to enjoy there, paired with some delightful teas.

Rich, moist, infused with alcohol and groaning with fruit! The last batch of our Christmas cakes got dispatched today.

The ritual of our traditional Christmas cakes starts with sourcing quality dried fruits and slowly developing the balance of sugars, zesty citrus and spices. We mature the cakes from Autumn, feeding them with a premium spirit. The cakes are finally encased in a layer of handcrafted pure almond marzipan icing.

Our family enjoys it as a dinner dessert with cream, or pairing it with cheese for afternoon tea. It’s also a lovely small gift when large slices are wrapped in butter paper and tied up with a ribbon.

With the encouraging feedback we have received we now know there is a tribe out there who enjoys the heavier, peatier, brightness of aged fruit cakes.

We are now starting a Plum Project. An all year offering of rich plum cakes that have aged gracefully with our care and attention. More on this soon.

There is something so magnificent about the craft of marmalade. From picking the fruits to juicing and cooking; each step truly invigorates us.

But mostly we love going into our villages and meeting the farmers. It’s so important to show them our appreciation for growing oranges using organic principles. It’s much harder than conventional farming, especially in the harsh terroir of our Himalayan foothills. Encouraging them and rewarding their work accordingly, aids in the sustainability of this principle.

Also, in marmalades the skin of the citrus is an essential part of the spread. Using fruits that have not been sprayed with chemicals makes our small batch Kalimpong Orange Marmalades a pure and delicious treat.

Our 2022-23 batch is now in production and we will post more about the Paddington Bear’s favourite preserve soon.

A personal note for aspiring women entrepreneurs from Mrs Neena Pradhan.

Part 1: The gist

“ What a year 2022 has been for me. From my food inadvertently getting ‘spotlighted’ through the power of Bollywood to ending the year with this.

I was humbled to be invited to talk at a Seminar for Women Entrepreneurs. It was inaugurated by - Mr Raju Bista, Hon’ble Member of Parliament, Darjeeling and presided by - Ms. Rekha Sharma, Hon’ble Chairperson, National Commission for Women (NCW), Govt. of India.

We are in the midst of a UN global campaign -“16 days of Activism against Gender-based Violence”. So this event was as important as it was timely. Economic independence is one of the most powerful advantages that women can create to have the confidence to face the many challenges that life may throw at us.

I don’t consider myself an entrepreneur in any measure of success. I see myself merely as an artisan who has been working on her craft for the past 50 years.

In my address I tried to share some habits that sustains me and regrets that I hoped some could learn from.

The only key ingredients in my culinary journey have been passion, and perhaps circumstance ! I will share the story of my journey in a part 2 to this note.

I am from a generation where options for women were limited, especially in our remote region. However, the opportunities ambitious women have before them today is unprecedented, wherever they are located.

While the passion for my work sustains me, and is a core component to do well in anything, I know that it is not enough to build a business. But today there is easier access to so many other components like funding avenues and technical resources, the training and knowledge to help start your business and to scale it, the power of the Internet and a supportive government offering schemes for all aspects of your entrepreneurial journey.

I thank the for having me, and I wish all you aspiring women entrepreneurs out there only Good Luck, because everything else is there for your taking. “
