Whole Wheat Cookies 😘😋😋

Ingredients Of Whole Wheat Cookies
1 cup atta
1 tsp baking powder
1/2 cup oil
1 cup brown sugar
2 egg whites
1 tsp cinnamon powder

How to Make Whole Wheat Cookies
1.Oven temp: 350 F-180 C
2.Mix the baking powder into the atta.
3.Add the brown sugar and oil into it and mix lightly with finger-tips to make the mixture look like bread-crumbs.
4.Add the egg and cinnamon and mix lightly till the mixture collects into a mass.
5.Break the dough into small portions and roll into smooth rounds and then press to make it a little flat.
6.Bake in the pre-heated oven for 10-12 minutes.
7.Note: You can substitute bran or oatmeal for half the atta for variety.

Kozhukatta Recipes 😋😋😋

കൊതിയൂറും നാടൻ ഗോതമ്പു കൊഴുക്കട്ട😍

Ingredients:
Wheat flour – 2 cup
Grated coconut – 5 handfuls / A whole coconut
Jaggery - 200g
Cardamom - To taste (Crushed)
Dry ginger – A small piece (Crushed)
Cumin seeds - To taste (Crushed)
Salt
Lukewarm water

Steps:
Mix wheat flour and salt and make a soft and pliable dough adding lukewarm water.The dough should be of chapati dough consistency.
Cover and set aside.

To make the filling, heat a pan and melt the jaggery in ¾ cup water.
Once jaggery is melted, add crushed dry ginger, cumin and cardamom.
Add coconut and mix well.
Cook stirring till the mixture becomes dry.
Once dry, switch off and transfer it to a plate. Let it cool.

Pinch a portion of the rested dough and make a medium size smooth ball.
Roll out the ball to a smooth thin disc (like chapati) with a roller.
Place a spoon of the cooled filling and shape it back into a smooth ball by bringing together the edges.
Pinch out the top portion as it will be thicker there.
Repeat these steps with the rest of the dough.

Bring water to boil in a steamer/idli cooker.
Transfer the kozhukattas to the steamer plate or idli plates and steam covered for 10 minutes.
Switch off the flame and remove kozhukattas.
Enjoy!

Idli is one of the most popular south Indian dishes out there is probably a favourite of every person out there walking the streets! Dosa is an equally popular dish. These dishes are one of the most healthy and nutritious South-Indian meals. However, these Idlis and dosas we are making today is different from the common dosa, because this dosa is made using broken wheat and other ingredients. These soft and spongy idlis and dosas are eaten for breakfast and as a snack. They are typically served with coconut or onion chutney and some hot Sambar.

Ingredients :
Broken Wheat - 1 cup (250 ml)
Red Poha - 1/4 cup
Urad Dal - 1/2 cup
Fenugreek seeds - 1 Tsp
Water
Salt - 1 Tsp
Oil

Method:
1. Soak the broken wheat in enough water.
2. Soak the red poha in enough water in a separate bowl.
3. Take the urad dal in another bowl.
4. Add the fenugreek seeds to the urad dal.
5. Soak them in enough water.
6. Let them soak for three hours.
7. Now, grind the soaked urad dal.
8. Add a little water and grind again into a coarse mixture.
9. Now, add the soaked red poha and grind.
10. Finally, add the broken wheat.
11. Add a little more water and grind into a fine thick batter.
12. Empty the batter into a wide bowl or container.
13. Add some salt and mix it in.
14. Close the lid and let it ferment for 12 hours or overnight.
15. Mix well once it ferments well.
16. Grease the Idli maker pans with some oil and add the batter to the pan.
17. Steam cook the idlis for 10 minutes on a medium-high flame.
18. Add a little more water to the remaining batter and mix it well so it becomes thinner.
19. Heat a tawa. Once the tawa is hot, pour a little batter and spread it evenly.
20. Add some oil over it.
21. After a few moments, flip it over. Cook evenly on both sides.
22. Your Wheat Idlis and Dosas are ready to be served!
