Hereβs a simple and tasty Dates and Imli (Tamarind) Chutney recipe, commonly used with chaats, samosas, or as a dip.

π― Dates & Imli Chutney (Khajur Imli Chutney)
Ingredients:
Seedless dates (Khajur) β 1 cup (approx. 150g)
Tamarind (Imli) β Β½ cup (soaked in warm water, about 75g)
Jaggery (Gud) β Β½ cup (adjust to taste)
Water β 2 to 2.5 cups
Roasted cumin powder β 1 tsp
Red chilli powder β Β½ tsp
Dry ginger powder (saunth) β Β½ tsp (optional)
Black salt β Β½ tsp
Salt β to taste

Instructions:
1. Soak Tamarind:
Soak tamarind in warm water for 15β20 minutes. Squeeze to extract pulp and discard the fiber/seeds.
2. Cook Dates:
In a saucepan, combine dates, tamarind pulp, jaggery, and 2 cups water. Bring it to a boil.
3. Simmer:
Reduce heat and simmer for 10β15 minutes until dates soften and everything blends well.
4. Blend:
Once slightly cooled, blend to a smooth paste. Strain for a smooth texture (optional).
5. Add Spices:
Return to pan. Add cumin powder, chilli powder, dry ginger powder, black salt, and regular salt. Simmer 2β3 more minutes.
6. Cool & Store:
Let it cool completely. Store in an airtight container in the fridge for up to 2β3 weeks.

Add more jaggery if you prefer it sweeter.
Can be frozen in small batches for months.
