Heyya..m back with the new recipe. Hope you all will enjoy making this and more when you are eating this yummy yummy KATORI CHAAT:😋🤩
INGREDIENTS:
For the Katori (cups):
200g plain flour
100g butter/ghee
½ tsp baking powder
Salt ½ tspn
Water for kneading the dough
Oil for frying
For filling the Katoris:
1.5 cup boiled chick peas
1 cup chopped boiled potato
¼ cup crumbled cottage cheese
1 medium onion, finely chopped
1 medium tomato, finely chopped
½ capsicum, finely chopped
2 green chilies, finely chopped
1tbsp chopped fresh coriander
1tsp chat masala
Salt to taste
1tbsp lemon juice
½tsp red chili powder
RECIPE:
To make the katori (cups):
Combine the flour,baking powder, butter and salt and make a stiff dough using a little water. Knead very well. Then cover it and keep it aside for 5mins. Now, grease a katori, roll the dough in a circle, place katori in the center and wrap the dough around it. Prick all over with a fork.
In the heated oil drop the katori wrapped with dough and fry it. Oil will start filling up in the katori, BE CAREFUL. Using a tong carefully remove the dough from the katori and after draining all the oil pull the katori out. Place the katori on a greased paper towel - DO NOT TOUCH, it's still hot. Keep frying the dough shaped katori in oil.
Once brown remove from oil and drain it on a paper towel.
Empty katoris will remain crisp for 4-5 hours.
To make the chaat:
Take the boiled chick peas in a bowl and add the chopped onion, tomato, capsicum, green chillies and toss. Now add little butter for taste and salt, chaat masala and red chilli powder and adjust the seasoning. Then add lemon juice to it. Fill the chaat in prepared cups and top with a little of the chutney and crumbled cheese and chopped coriander . Alternatively you could serve the chutney on the side as well.
Tips:
• Katoris can be baked and the dough requirement for both the katoris is different. Baked katoris dough needs milk/curd to keep it soft compared to fried ones that only needs water to knead the dough. For Baking, preheat the oven at 350 degree F. Bake them in the oven for about 10- 20 minutes or until the outer covering is brown.
• About the filling- be as creative as you can- just play around and you can have an amazing filling for these katoris/canopies. Few other options listed below –
Combine sprouts, corn, spring onions, black beans, salt and pepper. Toss. Fill katoris with this mix, add sour cream on top and serve.
Fill them up with marinara sauce, some veggies, cheese and bake them.
