Apple Spinach Salad

Ingredients

• Baby spinach
• 2 large apples, cored and thinly-sliced
• half a small red onion, peeled and thinly-sliced
• 1 cup walnut halves, toasted
• 2/3 cup dried cranberries
• 5 ounces goat cheese, crumbled
• 1 batch apple cider vinaigrette

CHAMPAGNE VINAIGRETTE INGREDIENTS:
• 1/3 cup extra virgin olive oil
• 1/4 cup champagne vinegar (or apple cider vinegar)
• 2 tablespoons lemon juice
• 1 tablespoon Dijon mustard
• 1 garlic clove, peeled and minced

TO MAKE THE APPLE SPINACH SALAD:

• Add spinach, apples, red onion, walnuts, dried cranberries, and half of the goat cheese to a large bowl. Drizzle with the vinaigrette, and toss to combine.

• Serve immediately, garnished with the remaining goat cheese.

TO MAKE THE CHAMPAGNE VINAIGRETTE:

• Add all ingredients together in a bowl and whisk to combine.
• Add pinch of salt and black pepper, 1 tablespoon honey

Ingredients:
2 cups chopped Spinach
Apple or Pear, cored and chopped1 stalk of CeleryJuice from 1/2 Lime or Lemon (or to taste), optional 3/4 cup Water.

1.Wash and clean the spinach, apple and celery. Cut apple and celery into large pieces.
2. Pour 3/4 cup water in a blender jar. Add apple and celery.
3. Add spinach and lemon juice.
4. Blend in a blender until smooth.
5. Strain and pour prepared juice into glass.
