Indulge in a festive delight this Diwali with creamy coconut chia pudding, topped with fresh fruits and a hint of cinnamon. A perfect blend of health and celebration!

Chia Coconut Pudding with Fruit Topping

Ingredients:

250 ml coconut milk
1 ½ Tbsp coconut sugar
1 ½ tsp chia seeds (per serving)
60 ml coconut milk (per serving)
Fresh fruits, for garnish
Cinnamon powder, for sprinkling
Instructions:

Prepare the Coconut Milk Base:

In a saucepan, gently heat 250 ml of coconut milk over low to medium heat—avoid bringing it to a full boil.
Add the coconut sugar and stir until it dissolves completely. Remove from heat and allow the mixture to cool.
Assemble Each Serving:

In a bowl or small jar, add 1 ½ tsp chia seeds and 60 ml of the cooled coconut milk mixture.
Stir well to combine and avoid clumping.
Repeat for each of the four servings.
Chill and Set:

Place the chia coconut mixtures in the refrigerator for a few hours, or until they thicken and set to a pudding-like consistency.
Serve:

Once set, top each pudding with fresh fruits of your choice and a sprinkle of cinnamon powder.
Serve chilled and enjoy!

"Happy Dhanteras from the many treasures! Enjoy a nutritious, easy-to-make Quinoa Kheer for a healthy celebration."

Ingredients:

2 tbsp quinoa, soaked for 15-20 minutes
1 tsp ghee
1/2 liter milk
1/4 cup hot water
1 tsp jaggery (adjust to taste)
A handful of mixed nuts (almonds, cashews, pistachios), soaked and chopped

Instructions:

Heat ghee in a pan over medium heat, add the soaked quinoa, and roast for 2-3 minutes until aromatic.

Pour in the milk and hot water, stirring well. Let the mixture come to a gentle boil.

Lower the heat and simmer for about 15-20 minutes, stirring occasionally, until the quinoa is cooked and the mixture has thickened.

Once reduced, add jaggery and mix well until dissolved. Adjust sweetness if needed.

Serve warm, topped with soaked, chopped nuts for added crunch and flavor.

Herby Barley Salad Recipe:

Ingredients:

30 g cooked Barley
1 chopped cucumber
1 chopped tomato
1 chopped carrot
5-6 chopped spring onions
For the Dressing:

1 tbsp chopped parsley
1 tbsp chopped mint
1 tsp chili powder
1 tsp black pepper
Salt according to taste
1 tsp olive oil
1 tsp lemon juice
2 cloves grated garlic

Instructions

Mix cooked barley, chopped cucumber, tomato, carrot, and spring onions in a bowl.

Combine chopped parsley, mint, chili powder, black pepper, salt, olive oil, lemon juice, and grated cloves in a separate bowl.

Pour dressing over veggies and barley. Gently toss.

🌾 Wholesome Jowar Bhakri 🌾
A gluten-free delight made with just jowar flour, sprinkled with aromatic ajwain! 🍃 Nutritious and tasty, it's a perfect way to savor traditional flavors while keeping it light on the tummy. 😋 Packed with essential nutrients, this Bhakri is a great source of fiber, iron, and B-vitamins. 👌🏼 Pair it with flavorful Pithla for a satisfying meal! 🍽️

Recipe

Ingredients:

30g Jowar (Sorghum) flour
1/2 teaspoon Ajwain (Carom seeds)
Water
Salt (to taste)
Instructions:

Mix jowar flour, ajwain, and a pinch of salt. Gradually add water to form a soft dough. Rest for 15-20 minutes.

Divide the dough into balls, flatten them to form discs.

Cook the discs on a pan until lightly browned on both sides.

Transfer the partially cooked bhakri to an open flame and cook until it puffs up and gets roasted.

Serve the Jowar Bhakri hot with pithla

"🌱 Whip up a delicious bowl of Horsegram pithla! 🍲✨ Perfect for all the amazing PCOS warriors out there, this traditional Indian recipe is packed with health benefits and cultural significance. 💪💚

🌟 Horsegram, also known as kulith, is a nutrient powerhouse that supports hormonal balance and overall well-being. 🌺 With its high fiber content, it aids in digestion, promotes weight management, and helps regulate blood sugar levels. 🌿

🌼Ingredients:

2 teaspoon horsegram flour(30g)
1 onion, chopped (30g)
4 cloves of garlic, chopped
3 pieces of kokum
1 teaspoon oil (5 g)
1 cup water (for cooking)
1 cup water (for mixing with horsegram flour)
2 green chilies, chopped
Salt to taste
Fresh coriander leaves for garnishing

Method:

Heat oil in a thick-bottomed kadhai or a deep skillet over medium heat.

Add chopped onions and garlic to the kadhai. Sauté them until the onions turn translucent and the garlic becomes fragrant.

Add chopped green chilies and kokum pieces to the kadhai. Stir well.

Pour 1 cup of water into the kadhai and bring it to a boil. Let it simmer for a few minutes until the kokum releases its flavor.

While the mixture is simmering, take 1 cup of water in a separate bowl and add horsegram flour to it. Mix well to form a smooth paste, ensuring there are no lumps.

Once the kokum mixture has simmered, slowly pour the horsegram flour mixture into the kadhai while stirring continuously to avoid any lumps.

Add salt to taste and stir well. Allow the mixture to cook on low heat for about 10-15 minutes, stirring occasionally. The mixture will thicken as it cooks.

If the mixture becomes too thick, you can add another 1/2 cup of water or as needed to achieve the desired consistency.

Once cooked, turn off the heat and transfer the Horsegram PITHLA to a serving bowl.

Garnish with fresh coriander leaves.
