Winter Special
BAJRA DHOKLA
INGREDIENTS AMT IN GMS
Bajra (raw) 30
Udad dal 15
Sesame seeds (white) 5
Ginger chili pasta 1 tsp
Mustard seed 5 (1 tsp)
Asafoetida A pinch
Coriander leaves for garnishing
Salt to tasty

METHOD

(1) Soak bajra in water for 4-5 hours. Drain the water completely and wrap it in a muslin cloth. Keep it for minimum 1 day and allow it to sprout.
(2) Soak udad dal for 3 hours.
(3) Grind the bajra and udad dal together and make it into a batter.
(4) Allow it to ferment fir 7-8 hours.
(5) Add ginger chili paste and salt to it.
(6) Pour the batter into a greased thali and sprinkle sesame seeds on top.
(7) Steam it on top of a steamer for 5 minutes and cut into diamond-shaped Dhoklas
(8) Heat oil, add mustard seeds and a pinch of asafetida and pour it on top of the Dhoklas
(9) Serve with coriander chutney.

Wheat grass (a potent healing agent)
What it is?
 Wheatgrass is a food prepared from the cotyledons of the common wheat plant, Triticum aestivum.
 Wheatgrass is harvested for juicing when the grass reaches its nutritional peak. This is just before the jointing stage, when the plant is between 7 and 11 inches tall.
 At this point, it has accumulated energy which will soon power a massive growth spurt.
How is it consumed & stored?
 It is consumed either in the form of juice or powder concentrate.
 When the grass is squeezed, a dark green liquid is expressed and this is called wheatgrass juice.
 The wheat grass can be stored in the refrigerator in a plastic container or a good quality cellophane bag for about 3 days. but the juice must be drunk as soon as juiced orwithin1/2 hour of juicing.
 Better than blenderizing with electric blenders make usage of manual mince maker or stone crushing method .Add a little water while grinding or pounding- strain the juice through a clean cloth into a cup or a glass. Grind again adding water - repeat this process until the remaining grass is almost white.

1. Crumble homemade paneer and leave aside.
2. Soak 2 tbsp soya granules in water.
3. Take 1 tsp of olive oil.
4. Add cumin seeds, chopped green chilies.
5. Sauté finely chopped onions (optional), tomato & capsicum.
6. Add turmeric powder, chilli powder.
7. Add paneer & soya granules.
8. Add salt to taste & garnish with finely chopped coriander.
