🌿Boil spinach for 3-4 mins, then blend with onion, green chili, ginger, and garlic

🌿Rest the dough for 15-20 mins.Divide dough into portions, roll into circles,
🌿Cook on a hot tava until golden brown spots appear on both sides.

Puran Poli: Tradition, taste… and a lot of confusion. Let’s break it down. 🤔

Can we really imagine Gudi Padwa without Puran Poli? 💛

A classic Maharashtrian festive delight—soft, sweet, and deeply rooted in tradition.

A pan-griddled flatbread stuffed with dal (chana/toor) + jaggery, known across India as Holige/Obbattu, Paruppu Poli, Ubbati—each region adding its own touch.

👍 Why it has value
Good quality protein
→ Wheat (cereal) + Dal (pulse) = complete amino acid profile
Sustained energy

→ Whole wheat = complex carbs + fibre
Micronutrient boost

→ Jaggery = iron, calcium, potassium
Supports digestion

→ Jaggery + spices (elaichi, nutmeg, saffron, mace)

Today we celebrate Basoda.
This day is dedicated to Sheetla Mata, literally speaking Goddess of Coolness.

Here is my take on the benefits of this practice of eating cold food or the food cooked previous day, during Sh*tal Puja.

Since summers slow down our digestion this practice introduces the body to the approaching season’s probiotic as well as pathogenic microbes through the food that is lightly ferment overnight.

The probiotic bacteria help strengthen immunity and boost gut flora, acts as barrier against bad bacteria.

This branch of probiotics and gut biome is under a lot of ongoing research.
