Umbadiyu is a healthy version of undhiyu that is famous in Valsad and Vapi region. Further down Surat has its green version which is called as Surati undhiyu.
If you go towards baroda, they have their undhiyu version which is called as matla undhiyu and towards rajkot it’s called Varadiyu.

Instant mixes for your travel Episode 1
First things first Yes I am a Dietitian and I am okay to recommend tea if you are habituated to it.
Instant Masala chai premix
Ingredients:
3/4th cup rock sugar (mishri)
3/4th cup tea leaves
15-20 cardamom
3-4 inches cinnamon
1 cup milk powder(unsweetened)
1/4th cup Ginger powder
Method:
Mix all ingredients accept milk powder and ginger powder and blenderize it to fine powder.
Run it through a seive
Now add milk powder and ginger powder
Store in a dry container and carry with you😀
Take 2 tablespoon of the mix, add hot boiling water.
Plz don’t forget to carry a strainer(Channi) you may need to strain it once before you have.
Sip it warm and enjoy!!!

Not more than 2 cups a day
Avoid having tea on an empty stomach
Avoid having tea first thing in the morning

Ingredients
4-5 betel leaves (paan)
2 tbsp gulkand for stuffing
1 cup desiccated coconut
½ cup milk
1-2 tbsp mishri powder (adjust to taste)
Method
In a grinder, add paan, mishri powder, milk and grind well.
add desiccated coconut in a bowl and add the blended liquid.
Turn off the flame and transfer it to a plate. Let it cool for few minutes till it becomes warm.
Mix it all well, knead into dough.
Grease the mold with ghee and stuff the prepared mixture into the mold and press to the sides. Stuff 1 teaspoon gulkand in center, Cover the bottom and seal it properly and tightly.
Carefully remove from mold. Grease and repeat to make remaining modak.
Enjoy this sweet.
Note:
Instead of milk, mishri powder you can add condensed milk(not healthy enough though).
Adjust the sweetness according to taste.
Additionally, in the stuffing you can add finely chopped almonds and cashews along with gulkand.

White butter has enormous health benefits;
It is rich in vital nutrients such as calcium, vitamin A, and vitamin D
Enhances immune system
It has a natural compound called lecithin which assists in breaking down unhealthy fats and accelerates metabolism.
Ingredients:
Malai at home or store bough heavy cream 250 ml
Chilli flakes 1 tsp
Garlic powder(you can completely skip if making this recipe for Janmashtami or during paryushan)
Black pepper powder
Mixed dried herbs
Fresh herbs of choice
Salt as per taste
Yogurt 2 tbsp
Method:
Add yogurt to the malai(cream) and let it sit for 6-8 hours.
Blend or churn it.
As you continue to churn the white Makhan separates.
Add to a bowl of ice bath and start holding the butter together gently squeezing to remove any excess water
What you get is makhan. Incase you don’t want to flavour it, add salt and use it instead of store bought butter. Much healthier I would say.
To flavour it add the remaining ingredients and mix together and store in refrigerator.
Use as a spread over bread, chapati, Khakhra, Puri.
