In the frame- Risotto Primavera😋
It's a delicious Italian veg rice recipe that is very easy to make from home available ingredients !
Just thought of sharing this recipe with you guys, as it is very tasty and easy to make, along with that, it's fully nutrient dense.
So here it goes!
Ingredients- 2 katori/vati rice, 4 katoris/vati vegetable stock( recipe in the method), half katori butter (loni), half katori thin sliced onion, 4-5 garlic petals vertically sliced, square cutted carrot, French beans(pharasbi), red capsicum, green peas (each half katori) half katori shredded cheese, fresh cream(doodha varchi saay), salt to taste, black pepper powder(kaali miri pood)
Method-
1-Wash the rice and drain water from it.
2-For vegetable stock- Take carrot, French beans, red capsicum, green peas, in a water filled vessel and boil until all the veggies get half cooked.Drain the vegetables from the water.The remaining water is your Vegetable stock.(vegetable stock remains in fridge for about 7 days and can be used for various other preparations)
3- In a kadhai, add half of the butter from the katori, add garlic and onion and saute it until they get smooth.
4- Add the rice over it and saute it.
5- Add the vegetable stock, salt to taste, black pepper powder and cook the rice.
6- add the half cooked vegetables and if required, add the leftover vegetable stock.
7- add the rest of the butter from the katori and add half of the cheese from the katori.
8- Garnish with cheese and fresh cream .
9- Enjoy!
