Homemade Nut & Seed Protein Powder----
A wholesome, natural protein blend made with roasted makhana, nuts, seeds, and sattu — no additives, just pure nutrition!
INGREDIENTS
• 50 g Makhana (Fox Nuts)
• 50 g Almonds
• 50 g Walnuts
• 50 g Cashews
• 50 g Sattu (Roasted Chana Flour)
• 30 g Mixed Seeds (sunflower, pumpkin, flaxseeds)
STEPS
1️⃣Heat a pan on low-medium flame. Add 50 g Makhana (Fox Nuts) and dry roast, stirring continuously, until they turn crisp and lightly golden. Let them cool completely.
2️⃣ In the same pan, lightly dry roast 50 g Almonds, 50 g Walnuts, and 50 g Cashews separately on low heat for 2–3 minutes each until fragrant. Do not over-roast. Spread on a plate and cool completely.
3️⃣ Lightly roast 30 g Mixed Seeds (sunflower, pumpkin, flaxseeds) on low heat for 1–2 minutes until they start to pop gently. Remove and cool completely.
4️⃣Ensure ALL roasted ingredients are completely cooled to room temperature before blending. Blending warm ingredients creates moisture, which will ruin the powder texture.
5️⃣Add the cooled makhana, almonds, walnuts, cashews, and mixed seeds into a high-speed blender or dry grinder. Pulse first, then grind until you get a fine, smooth powder. Add 50 g Sattu (Roasted Chana Flour) and pulse a few more times to combine evenly.
6️⃣Pass the powder through a fine sieve to remove any coarse bits. Re-grind the coarse bits. Store in an airtight glass jar in a cool, dry place. Use within 3–4 weeks for best freshness.
NOTES
Total batch weight: ~280g
Serving size: 30g (~9 servings per batch)
Tips:
- Roast each ingredient separately as they have different roasting times.
- Always cool completely before blending to avoid clumping.
- You can add 1 tsp cardamom powder or cinnamon for flavour.
- Walnuts are oily — don't over-process or it will turn into nut butter!
