बहुत से लोग बादाम को रातभर भिगोकर खाते हैं. भीगे हुए बादाम से छिलका आसानी से उतर जाता है, वो मुलायम हो जाते हैं और अच्छे से चबाए जा सकते हैं जिससे उनको खाना आसान हो जाता है। परन्तु भीगे हुए बादाम को खाने के पीछे यह कारण नहीं हैं.
दरअसल बादाम को रातभर भिगोकर खाने की सलाह इसलिए दी जाती है क्योंकि ऐसे खाने से स्वास्थ को बहुत लाभ मिलता है.

बादाम प्रोटीन, फाइबर, विटामिन ई, कैल्शियम, ज़िंक, फास्फोरस, मैग्नीशियम जैसे पोषक तत्वों से परिपूर्ण होता है. सादे बादाम में टैनिन नामक एंज़ाइम होता है जो बादाम में निहित पोषक तत्वों को शरीर में अवशोषित (absorption) होने से रोकता है. बादाम को रात भार भिगोने से टैनिन दूर होता है और यह पोषक तत्व आसानी से अब शरीर में अवशोषित हो सकते हैं.

सुबह सुबह सबसे पहले भीगे हुए बादाम खाने से पेट से निकला हाइड्रोक्लोरिक एसिड (Hydrochloric acid) विनियमित (regulate) होता है। इससे एसिडिटी (acidity) भी ठीक रहती है और पेट में प्रोटीन का पाचन भी पूरे दिन ठीक रहता है। इस प्रकार सीने में जलन और गैस्ट्रिक (gastric) लक्षणों से भी आपका बचाव होता है.

वैसे तो बिना भिगोए बादाम खाने के कोई नुकसान नहीं हैं। पर आप अगर उन्हें रात पर भिगोकर अगली सुबह छिलका उतारकर खाएँगे, तो निश्चित रूप से ज्यादा फायदा होगा।
